Cooking process:

1. Wash the eggplants, dry them, cut them into thin strips and fry them in vegetable oil on both sides.
2. Place the fried eggplants on paper towels to remove excess oil.
3. Grind walnuts, garlic and spices through a meat grinder.
4. Chop the onions and greens very finely, mix with the nut mixture, add wine vinegar.
