Step 1. Immediately prepare all ingredients for pilaf. Wash the lamb ribs and cut into small pieces along the bone. Peel the vegetables, rinse and cut into thin strips. Cut the fat tail fat into pieces, melt in a deep cast-iron frying pan or cauldron and remove the cracklings.
Step 2. Over high heat, fry the chopped onion in fat until golden brown.
Step 3. Add chopped carrots to the onions and lightly fry.
