How to prepare a delicious burbot dish? First, thoroughly wash the fish under running water. Next, we clean it of scales, remove the gills with entrails and, if desired, cut off the head. Then rinse the fish again under water. It is also advisable to remove the skin and cut off the fins and tail.

Peel the onions and cut them into half rings. Wash the tomatoes thoroughly under running water and cut into arbitrary small pieces. Finely chop parsley, basil and dill. Squeeze the juice of half a lemon into a suitable container, add herbs, tomatoes, onions, salt and mix thoroughly.

We put greens mixed with vegetables into the belly of the burbot, and sprinkle the fish itself with salt, spices to taste and grease with vegetable oil on all sides.

- Sour cream – 200 gr.
- Dijon mustard – 3 tbsp.
- Vegetable oil – 30 gr.

- Fresh dill – 3 sprigs.
- Salt - to taste.
- Ground black pepper - to taste.
Cooking process:
Step 1. First, clean the burbot without removing the skin. We cut off the fins and in their places we clean the skin with a sharp knife.Cut the prepared fish into portions 4-5 cm thick.
Step 2. Wash fresh dill under cool water, dry on a paper towel and finely chop. Place sour cream, Dijon mustard, and dill into a deep container, mix everything thoroughly and let stand for 10 minutes. Next, add olive oil and mix well.
Step 3. At the end, add soy sauce and beat everything with a fork.
Step 4. Rub the burbot with salt and ground black pepper to taste and dip each piece into the resulting sauce.
Step 5. Grease a baking dish with vegetable oil, sprinkle with flour and place the fish there. Preheat the oven to 180OC and bake everything for 25 minutes. Next, reduce the temperature, cover the pan with foil and leave the fish to finish cooking.

Step 2. Peel the potatoes, rinse them well under running water and cut them into large slices.
Step 3. Wash the carrots, peel and cut into circles or large cubes.
Step 4. Peel the onions and cut them into small cubes.
Step 5. Place the head with bones in a suitable pan, fill it with cold water, put it on the fire and cook the broth.Add potatoes, onions, carrots and cook until tender. We remove the head and, if possible, bones from the broth and add pieces of fish to the soup, cook for another 15-20 minutes. 5 minutes before readiness, add salt, ground black pepper, bay leaf, cover the pan with a lid and bring to readiness.

The burbot fillet with bread, onions and lard soaked in milk is passed through a meat grinder twice. Then salt, pepper, eggs are added to the minced meat, after which everything is mixed well and beaten. Next, cutlets are formed, rolled in breadcrumbs and fried in a frying pan.

- Pork lard – 200 gr.
- Onions – 2 pcs.
- Chicken eggs – 2 pcs.
- Stale wheat loaf – 200 gr.
- Milk – 200 ml.
- Breadcrumbs – 150 gr.
- Salt - to taste.
- Ground black pepper - to taste.
- Vegetable oil – 100 gr.
Cooking process:
Step 1. Cut the loaf into slices, place them in a deep container and fill with milk. Knead the wheat crumb with a fork and leave it for 5-6 minutes.
Step 2. Dry the burbot fillet on a paper towel and pass it through a meat grinder, alternating with a softened loaf, peeled onions and pieces of lard. You should pass the minced meat through the meat grinder again so that it becomes more tender and the bones are not felt.
Step 3. Now add salt and ground black pepper to the minced meat to taste. If desired, you can add other favorite seasonings.
Step 4.At the end, add two eggs, mix the minced meat thoroughly with your hands, then beat it at least 20 times so that it becomes fluffy and homogeneous.
Step 5. Wet your hands in cool water, scoop up the minced meat with a tablespoon and form it into neat cutlets, which you then roll in breadcrumbs on all sides.
Step 6. Heat the vegetable oil well in a frying pan, lay out the cutlets and fry them on both sides for 3-4 minutes. Place the fried cutlets on a paper towel to drain excess fat.

Step 2. Place chicken eggs in a saucepan, fill them with water, put on fire, bring to a boil and hard-boil for 10 minutes. Then fill them with cold water and peel them.
Step 3.Peel the onions, cut into half rings and sprinkle with salt. Heat a small amount of vegetable oil in a frying pan and fry the onion in it until golden brown.
Step 4. Roll out half of the yeast dough into a large layer and place it on a baking sheet sprinkled with flour. Place onions on the dough, then a layer of fish, which we sprinkle with salt. Next, add chopped boiled eggs, finely chopped green onions and sprinkle everything with salt and pepper. Cover the filling with a second layer of dough and pinch the edges tightly.
