Although paper made from rice flour is a somewhat exotic product, cooking with it is a real pleasure, because in order for the component to become elastic, it is enough to dip the sheet in water for a few seconds. Rice paper goes well with meat and seafood; also, if you are a fan of fried things, you can brown it in a frying pan and at the same time heat up the ingredients of the roll.
Rice paper spring rolls
Rice paper spring rolls can be prepared with a wide variety of ingredients, but today we present to your attention a recipe for a light and nutritious dish in which we will focus on fresh vegetables. Let's complement the assorted vegetables with shrimp and get not only a healthy, but also a very tasty snack!
- Rice paper 4 sheets
- Frozen shrimp 150 (grams)
- Cucumber 1 (things)
- Bulgarian pepper ½ (things)
- Carrot 1 (things)
- Iceberg lettuce 1 bunch
- Rice noodles 50 (grams)
- Sunflower oil 3 (tablespoons)
- Soy sauce taste
- Salt taste
- Ground black pepper taste

We clean the pre-defrosted shrimp from the head, tail and shell, sprinkle with a pinch of salt and pepper - fry for 60 seconds on each side in heated vegetable oil.

Cut the peeled carrots and washed cucumber into thin oblong slices.

Grind the pulp of sweet pepper in a similar way.

Cook the rice noodles according to the instructions, drain in a colander and rinse under running cool water. We cut it in several places with a knife for convenience.

Assembling the roll: dip a sheet of paper in cool water and leave for 15 seconds. We transfer the elastic layer to a cutting board, put the filling, stepping back a few centimeters from the edge.

Cover the salad, noodles, vegetables and seafood with the nearest free edge (see photo).

Fold the top and bottom edges of the paper inward and roll it into a tight roll.

Fry the pieces in heated vegetable oil for 1-2 minutes on both sides, blot with a paper towel and serve.

Ingredients:
- Rice paper – 10 sheets.
- Minced meat – 250 gr.
- Funchoza – 50 gr.
- Onion – 1 pc.
- Carrot – 1 pc.
- Sunflower oil – 3-4 tbsp.
- Salt - to taste.
- Ground black pepper - to taste.
Cooking process:
Step 1.Before starting cooking, defrost the minced meat, peel and rinse the vegetables.
Step 2. Finely chop the onion and chop the carrots on a borage grater - fry in vegetable oil until soft and light brown.
Step 3. For frying, add minced meat, salt and pepper. Use a spatula to break up large lumps.
Step 4. Fry over moderate heat until all ingredients are cooked.
Step 5. Fill the noodles with boiling water for 5 minutes, pour in the broth and rinse. We cut it into small segments with scissors and add it to the minced meat, mix it and our filling is ready.
Step 6. Dip a sheet of rice paper in water for three seconds and place it on a flat surface, place part of the filling in the center and roll it up, tucking the edges.
Step 7. Fry the pancakes in oil until a characteristic crust forms.

- Cilantro - to taste.
- Salt - to taste.
For the sauce:
- Avocado – 1 pc.
- Milk – 200 ml.
- Cilantro - to taste.
- Natural yogurt – 150 gr.
- Granulated garlic – ½ tsp.
- Salt – ½ tsp.
- Lemon juice – 1 tbsp.
Cooking process:
Step 1. We start cooking with the sauce: pour half the milk into a blender, add spices, yogurt, avocado pulp and cilantro.
Step 2. Beat at high speed until smooth and adjust the thickness to your taste, adding the remaining milk little by little. Place the sauce in the refrigerator for a while.
Step 3. Separate the fillet from the bone and rinse under water, fry until golden brown and cooked in a frying pan with a lid. Season with salt and seasonings, cut into small cubes. Cut fresh cucumber and green lettuce into strips.
Step 4. Dip a sheet of rice paper into a wide container of water for the time indicated on the package.Take it out and hold it in your hands until the excess drops drain.
Step 5. Place all the ingredients of the delicious filling on the paper, just below the center.
Step 6. Roll the roll like an envelope, like stuffed pancakes or cabbage rolls.

Cooking process:
Step 1. We pass the peeled onions and pork through a meat grinder or beat until smooth in a blender.
Step 2. Pour boiling water over the funchose and leave for 10 minutes. Afterwards, squeeze out excess moisture with your hands and chop with scissors.
Step 3. Peel the carrots and grate them on a Korean carrot grater.
Step 4. Chop the green onion feathers into rings.
Step 5. Add vegetables, herbs, noodles and salt to the minced meat, mix well and let stand for a while.
Step 6.Dip the paper for 7-10 seconds in warm water and transfer it to a bamboo mat or wooden cutting board, put the filling as shown in the photo and roll it up, tucking the top and bottom edges to the center.
Step 7. Fry the pancakes in a large amount of vegetable oil at a distance from each other. Cook until golden brown, turning often and carefully.
Step 8. For the sauce, grate the peeled clove of garlic and ginger, combine with tomato paste or ketchup.

Step 2. Dip the paper in water for a few seconds and place it on the board, lay out the tomato, lettuce, arugula and carrots. We also add cottage cheese, salt and black pepper.
Step 3. Place fish slices, avocado and sweet pepper on top.
Step 4. Roll the roll into a tight roll.

Cooking process:
Step 1. A few hours before cooking, remove the seafood from the freezer and leave it at room temperature.
Step 2. Dip the shrimp in boiling water for 1-2 minutes.
Step 3. Clean the shellfish and cut the washed cucumber into bars. We also thoroughly rinse the arugula and shake off excess moisture.
Step 4. Pour water into a wide container and wet the paper.
Step 5. Quickly transfer to a cutting board and lay out shrimp and cucumbers.
Step 6. Add chili pepper rings and herbs.
Step 7. Fold the edges and form rolls.
Step 8. Place the rolls in a frying pan with vegetable oil, always at a distance from each other.
