For the test:
- Flour – 300 gr.
- Butter – 150 gr.
- Milk – 12 tbsp.
- Salt – 1 tsp.
For filling:
- Spinach – 400 gr.
- Feta cheese – 350 gr.
- Green onion – 20 gr.
- Dill – 20 gr.
- Eggs – 1 pc.
- Garlic – 2 teeth.
- Sunflower oil – 2-3 tbsp.
Additionally:
- Eggs – 1 pc.
- Sesame - to taste.
Cooking process:
Step 1. Mix salt and flour, add chilled butter, crushed on a coarse grater - knead into crumbs.
Step 2. Pour cold milk and collect the mass into a lump.
Step 3. Separate two thirds from the semi-finished product and roll it into a layer about 3-5 millimeters thick. Helping yourself with a rolling pin, transfer it to the mold and form the sides.
Step 4.To prepare the filling, heat the vegetable oil in a frying pan and quickly fry the pieces of garlic, no more than one minute.
Step 5. Throw away the garlic and fry the chopped spinach in aromatic oil, after 5 minutes of simmering under the lid, add chopped herbs. Stir and keep on the burner for another 1-2 minutes.
Step 6. With clean hands, break the feta into small pieces and mix with the cooled green mixture.
Step 7. Break the egg into the spinach and cheese mixture and mix vigorously.
Step 8. Place the filling on the base and distribute.
Step 9. Roll out the rest of the dough and place it on top of the spinach mass, fasten the edges, and make a hole or cut in the center of the workpiece to allow steam to escape freely.
Step 10. Coat the top with beaten egg and sprinkle with a handful of sesame seeds.
Step 11. Cook the food at 190 degrees for 30-40 minutes.

Step 1. Heat sunflower oil in a saucepan, add a piece of butter, chopped onion, salt and sugar - fry until light brown with constant stirring (8-10 minutes).
Step 2. Now place thin slices of potatoes in a fireproof bowl and simmer until the component is soft for about 15 minutes.
Step 3. Without wasting time, separate the stems from the spinach bunch.
Step 4. Thoroughly rinse the greens and place in a colander to get rid of excess moisture.
Step 5. When the potatoes are ready, put the spinach in a bowl, add salt and pepper.
Step 6. Close the container with a lid and cook over low heat for about 2-3 minutes.
Step 7. Now fill the ingredients with a liter of water.

- Flour – 140 gr.
- Cold water – 2 tbsp.

- Butter – 10 gr.
- Spinach – 100 gr.
- Hard cheese – 60 gr.
- Salt - to taste.
- Ground black pepper - to taste.
- Ground nutmeg - to taste.
Cooking process:
Step 1. Before starting cooking, weigh each component.
Step 2. Prepare the dough: pour flour and salt into a blender bowl, add cubes of cold butter and beat into fine crumbs.
Step 3. Add the egg to the mixture and beat again. If the dough does not form into a ball, add a little ice water.
Step 4. Transfer the mass to cling film and press lightly, wrap it and put it in the freezer for half an hour.
Step 5. Wash the spinach leaves thoroughly and let them dry, then simmer in butter until soft, covered.
Step 6. Using a fine-hole grater, chop a piece of hard cheese.
Step 7. Mix two types of cheese.
Step 8. Add the limp spinach to the cheeses and mix.
Step 9. Next, add the chopped egg, ground pepper, nutmeg and salt.
Step 10. Place the frozen dough in the mold and distribute it along the bottom, forming the sides.
Step 11To prevent the cake from rising during the heat treatment, place a sheet of baking paper on top and pour in any cereal - bake at 180 degrees for 15 minutes.
Step 12. After the time has passed, remove the parchment along with the “weight” and evenly place the filling on the base.
Step 13. Bring the quiche to readiness for 30-35 minutes.
Step 14. Leave the finished baked goods in the oven with the door open for another 15-20 minutes and only then cool at room temperature. Cook and have fun!
Georgian spinach pkhali
