Step 1. First, peel the onions and garlic and chop them finely. Remove the sun-dried tomatoes from the oil and cut into strips. Sprinkle the trout fillet on all sides with salt and pepper. Heat the olive oil in a frying pan and place the fish there, skin side up. Fry for 5 minutes, then turn over and cook for another 3-5 minutes.
