- Paprika 2 (teaspoons)

To prepare oven-roasted turkey drumsticks, first wash and dry the meat. Let's pull the skin off the shin like a stocking, removing any interfering films, and make punctures in the meat in a random order for better marinating.

- Vegetable oil – 1 tbsp. l.
- Medium potatoes – 5 pieces.

In addition, we will prepare cranberry sauce, which goes well with turkey, and will also serve as a wonderful addition and give the dish a special idleness!
Ingredients:
- Turkey drumstick – 2 pieces (1 kg).
- Onions – 2 heads.
- Frozen mushrooms – 100 g.
- Sunflower oil – 3 tbsp. l.
- Wheat bread (loaf) – half.
- Orange – 1 pc.
- Frozen cranberries – 100 g.
- Salt, pepper to taste.
Cooking process:
Step 1. Check the drumstick for the absence of small feathers, rinse under running water, and dry with a paper towel. Carefully, without allowing any tears, we pull the skin together like a stocking, heading towards the joint. If necessary, use a knife.We chop the leg bone together with the meat near the joint (6 cm from the edge) and you get a bag of turkey skin with a small bone at the end. We do the same with the second shin.
Step 2. Cut the meat off the bone and chop it into small pieces; this method allows you to give an unusual taste sensation compared to minced meat. To stuff two drumsticks, the meat of one drumstick will be enough.
Step 3. Cut half the loaf into small cubes. The bread should not be too soft and crumble. I use a sliced loaf, it keeps its shape well. Dry the pieces in the oven a little, literally 5 minutes.
Step 4. Boil the mushrooms in salted water for 10 minutes, drain the water, rinse and chop with a knife.
Step 5. Peel the onion, cut it quite finely, and sauté until transparent. Take 1/3 of the onion out of the pan and set it aside for the sauce, mix the rest with mushrooms and pieces of turkey, fry the whole mass for 5 minutes. When the mushroom mass has cooled, mix it with croutons from the loaf, add salt and pepper to taste.
Step 6. Place the minced meat into the drumstick bags; you don’t need to stuff too much, otherwise the skin may burst during cooking. We connect the edges with a toothpick and brush the top with vegetable oil.
Step 7. Place on a wire rack in an oven preheated to 200°C for 10-15 minutes, let the skin brown sufficiently. Place a baking sheet underneath to protect the oven from fat and juice.
Step 8. In the meantime, let's make the sauce. Place the cranberries with the remaining fried onions in a saucepan and add the orange zest. Let the cranberries thaw a little and simmer over low heat for 10 minutes. Grind the sauce with a blender and put it in a gravy boat.

Ingredients:
- Turkey leg steaks – 4 pcs.
- Salt – 1 tsp.
- Ground black pepper – 0.5 tsp.
- Small lemon – 1 pc.
- Olive oil 5 tbsp. l.
Cooking process:
Drumstick steaks can be purchased in the store already cut, then they will be smooth and beautiful. It’s good if you can buy steaks from young birds, their meat is more tender. You can make them yourself by cutting the drumstick across the grain and cutting the bone in one precise movement.
Step 1. If the drumsticks are frozen, defrost them, do this strictly in the refrigerator, then wash and dry them with a paper towel.
Step 2. Marinate the meat a little. Brush the shin pieces with olive oil, rub with salt and pepper to taste and place in a bowl, topping with lemon slices. Cover with a lid and place in the refrigerator for 30-50 minutes, longer if time permits.
Step 3: Remove the marinated turkey to warm through and prepare the oven.
Step 4. Place a cast iron frying pan on the grill, set the “Broil” mode and heat for 10 minutes. When the frying pan is hot enough, take it out of the oven and place the steaks with kitchen tongs so that there is a space of 1 cm between them.Place in the oven, close the door, after 3 minutes, check if the meat is browned on the bottom - it’s time to turn it over to the other side for another 3 minutes.
Step 5. After this, turn the oven to 260°C, at this temperature the turkey will be ready. There is no longer any need to turn it over to the other side; you can only periodically baste the steak with the juice formed during frying, so it will be juicier. If you want a medium-rare steak, just leave it in the oven for 2-5 minutes, depending on the thickness. Ideally, check the temperature using a meat thermometer; the internal temperature should be 60-65°C. If you like well-done meat, you need to hold it for 4-9 minutes. The temperature should be 65-70°C.
Step 6. Take the finished steak out of the oven along with the frying pan, turn off the temperature in it, transfer the meat to a dish, pour over the juice and let the meat “rest” for 3-7 minutes.
Step 7. To maintain the temperature of the meat when serving, we must put it in warm plates, for this we place the plates in a still warm oven for 3 minutes and lay out our restaurant masterpiece in portions.
Step 8. If suddenly the oven does not support the frying mode, you can cook the steak by initially “sealing” it in a hot frying pan on the stove, and then finish it in the oven.

- Turkey drumstick – 1 pc. (0.7kg).
- Canned pineapple – 2 cups.
- Sour cream 15-20% – 4 tbsp. spoons.
- Salt – a couple of pinches to taste.
- Coriander – 0.5 teaspoon.
- Oregano – 0.5 teaspoon.
- Dried dill - a pinch.
- Pepper - on the tip of the knife.
- Water – 0.5 cups.
- Hard cheese – 40 g.

Step 1. Wash the drumstick, pat dry with a towel and season with salt, rubbing a little. In the recipe we use a large drumstick, which is enough for 2 servings, you can take 2 small ones. Place sour cream, dried dill, ground coriander and oregano in a separate saucer. Using a spoon, stir the sour cream sauce until smooth. If time permits, it is better to leave the drumstick to marinate for 30 minutes or longer in the refrigerator; if there is no time, we continue to cook.
Step 2. Generously coat the drumstick on one side with sauce and place it in the sleeve with the greased side down. Tie the sleeve on one side, brush the drumstick with the remaining sauce on top and place the pineapple pieces. Place the sleeve in the mold and place in a preheated oven at 180 degrees.
Step 3. The drumstick will take 40-50 minutes to cook. Then carefully, so as not to get burned, cut the sleeve and leave it in the oven to bake for another 5 minutes.
Step 4. Grate the cheese on a fine grater. Place the hot turkey drumstick on a serving plate and sprinkle grated cheese on top, garnish with a sprig of herbs.

Step 2. Turn on the oven to preheat to 160 degrees. We coat the drumstick with the resulting sauce, trying to ensure that the marinade gets under the skin and into all the recesses of the meat. In a baking dish we place a pillow of the remaining 2.5 onions cut into large rings, place the workpiece on top, wrap it on all sides with rosemary and thyme herbs. Cover the pan with foil.
Step 3. Place the pan in the oven and bake for an hour and a half, after which we remove the foil, increase the temperature to 180°C and periodically baste the turkey with the juice formed during baking. So cook for another 40 minutes.We check the readiness of the meat by the color of its juice by making a deep cut; if the juice flows out clear, the meat is ready.
Step 4. Remove the finished turkey from the oven, leave the meat to rest for 7 minutes, cut into slices.

- Honey – 1 tbsp. spoon.

- Butter – 20 gr.
Cooking process:
Step 1. Let's start with the meat sauce. Melt the butter and combine it with honey, salt and pepper. Let's mix.
Step 2. Wash the shin and dry it with a towel. It is very important to prepare this dietary meat correctly. If the drumstick is large, it is better to make cuts along the entire length of the drumstick, so the meat will cook faster, but this is not necessary. Lubricate the drumstick with honey sauce on all sides and place in a heat-resistant dish. Pour a little water (2 mm) into the bottom. Cover the top of the form with foil. Cooking at a temperature of 200 degrees will take 1.5 - 2 hours.
Step 3. After 1.5 hours, remove the foil, use a knife to check the readiness of the meat, by checking the juice when the meat is pierced. If clear juice flows out of the puncture site, the meat is ready; if it is pink, pour the juice over the meat, cover with foil and cook for another 30 minutes. - Soy sauce – 4 tbsp. spoons.
