Korean fish hye - a classic recipe at home
Korean fish hye is a savory and light appetizer that can be made from any fish with a minimum number of bones. Today we present to your attention a recipe for making heh from red fish - pink salmon or chum salmon. Be sure to try it and you will be satisfied!
- Pink salmon 250 gr. (fillet or chum salmon)
- Bulb onions 1 (things)
- Vinegar essence 1 (teaspoons)
- Water 50 (milliliters)
- Soy sauce 2 (tablespoons)
- Chilli taste

We thoroughly wash the fish under running water and dry it in any convenient way, using tweezers we remove even the smallest bones and cut them into arbitrary small pieces.

Season the fillet with soy sauce and hot pepper; adjust the quantity yourself, based on your taste preferences.

Mix well and add onion rings or half rings.

In a separate container, mix water and acetic acid.

Pour the solution over the onion and fish pieces.

- Pike – 2 kg.
- Onion – 1 pc.
- Garlic – 6 teeth.
- Carrot – 1 pc.
- Salt – 1 tbsp.
- Vinegar 9% – 3 tbsp.
- Water – 1 tbsp.
- Vegetable oil - for frying.
Cooking process:
Step 1. We clean the fish from scales, make an incision along the abdomen and remove the insides along with the dark films. We wash it inside and out, separate the fillet and cut it into slices about one centimeter in size.
Step 2. Add salt to the pike and mix, while simultaneously “freeing” the garlic cloves from the husk.
Step 3. Pass the hot cloves through a press and add to the fillet.
Step 4. Combine water and vinegar in a glass.
Step 5. Pour the resulting mixture over the pike and move the workpiece to the refrigerator for an hour.
Step 6. Without wasting time, peel and cut one carrot into strips.
Step 7. After 60 minutes, pour the orange slices into the fish, stir and return to the cold.Cut the onion into half rings and sauté in oil until transparent.
Step 8. Add the sautéed onion and oil to the fillet, mix and keep in the refrigerator for at least another hour and a half, or better yet, overnight.

Homemade pike perch heh is small pieces of fish fillet marinated in a mixture of acetic acid and salt, and also supplemented with vegetables such as onions and carrots. You won't have to spend more than 20 minutes preparing!

Ingredients:
- Pike perch (fillet) – 500 gr.
- Carrots – 2 pcs.
- Onion – 2 pcs.
- Acetic acid 70% – 1 tbsp.
- Sunflower oil – 100 ml.
- Ground coriander – 1 tsp.
- Ground black pepper – 1 tsp.
- Ground hot red pepper – ½ tsp.
- Salt – 1 tbsp.
Cooking process:
Step 1. Cut the fillet from the fish and rinse with water, pat dry with paper towels and remove the skin.
Step 2. Cut the pulp into medium-sized slices and place in a bowl, removing as many bones as possible.
Step 3. Pour acetic acid over the fish, mix vigorously and place on the refrigerator shelf for at least 30 minutes.
Step 4. At the same time, peel and chop the carrots using a Korean carrot grater.
Step 5. Cut the peeled onion into quarter rings or feathers.
Step 6. Place a layer of onions and carrots on top of the whitened pike perch, season with two types of pepper, salt and coriander.

Korean-style silver carp hye is an original appetizer that can easily diversify your usual diet, as well as decorate a holiday table set for any occasion. The dish has a rich sweet and sour taste and a subtle garlic aroma.

Ingredients:
- Silver carp – 350 gr.
- Carrot – 1 pc.
- Onion – 1 pc.
- Vinegar 9% – 3 tbsp.
- Vegetable oil – 40 ml.
- Salt – ½ tsp.
- Ground black pepper – 2-3 pinches.
- Black peppercorns - to taste.
- Coriander seeds – 3 pinches.
- Garlic – 1 tooth.
- Laurel leaf – 2 pcs.
- Greens - to taste.
Cooking process:
Step 1. Before starting cooking, peel and peel the vegetables, and remove the scales from the fish. We also cut out the fins and separate the fillets and rinse them.
Step 2. Separate the pulp from the seeds, cut into small strips, about a centimeter thick.
Step 3. Place half rings of onion on the silver carp.

- Granulated sugar – 2 tbsp.
- Garlic – 1 head.
- Salt – 2 tbsp.
- Cilantro – 1 bunch.
- Bell pepper – 500 gr.
- Vegetable oil – 150 ml.
Cooking process:
Step 1.We cut the washed and dried cucumbers into small cubes, as shown in the photo.
Step 2. Cut the pepper pulp into oblong strips, rinse the cilantro and shake off excess moisture - chop it.
Step 3. We cut the carp, separate the fillet and cut it into arbitrary slices - put it in a large container, sprinkle with salt and two types of ground pepper, mix and fill with oil and vinegar essence. Add chopped onions.
Step 4. Next, add bell pepper and chopped garlic, herbs and spices to a plate - mix vigorously and leave covered for 20 minutes.
