Potato sorcerers with minced meat are very easy to prepare. Add finely chopped half an onion, herbs, a little water, spices and salt to the minced meat - mix well and the juicy filling is ready.

Grate the peeled onion and potatoes into a large, deep plate.

Beat the egg into the resulting mass, add flour, salt and pepper and knead the dough.

Heat the vegetable oil in a thick-bottomed frying pan and add the potato mixture with a tablespoon, forming pancakes.

A classic of Belarusian cuisine is, of course, traditional meat-filled sorcerers, which are served in many cafes and restaurants, however, a dish prepared at home with special love and care is incomparable to anything else. We bake potato pancakes with minced meat in the oven and make the family happy!

- Potatoes – 1 kg.
- Minced meat – 300 gr.
- Onion – 1 pc.
- Egg – 1 pc.
- Flour – 4 tbsp.
- Sunflower oil – 4 tbsp.

Cooking process:
Step 1.We prepare the products indicated in the list of ingredients: peel the vegetables and rinse with water.
Step 2. Grind the potatoes using a fine grater.
Step 3. We do the same with the onion.
Step 4. Transfer half of the grated onion to the minced meat for juiciness, also add salt and pepper and mix.
Step 5. Using wet hands, form small balls from the resulting filling, no larger than a walnut.
Step 6. Place the potato mixture on cheesecloth and place a deep container underneath to drain the vegetable juice.
Step 7. After 4-5 minutes, drain the excess liquid; starch remains at the bottom of the dish.
Step 8. This component is necessary for the thickness of the dough.
Step 9. Place the chopped potatoes back into a deep bowl.
Step 10. Beat in the egg, add starch, salt and flour - stir until smooth.
Step 11. If the mass remains too liquid, add a little more flour.
Step 12. Let's start forming: place a tablespoon of dough on a damp palm, and place a meat ball on top.
Step 13. Fold the edges up so that the filling remains inside the “bag”.
Step 14. Fry the formed sorcerers in hot oil on both sides until golden brown.

Cooking process:
Step 1. Peel all the vegetables and rinse them thoroughly with water, defrost the minced meat.
Step 2. Grind the onions and potatoes using a food processor or a fine grater until pureed.
Step 3. Add onion to the meat component, season with pepper and salt - mix.
Step 4. Add potatoes to the resulting mass and stir again.
Step 5. Beat in two eggs.
Step 6. And finally knead the “dough”, adding salt if necessary.
Step 7. Heat the oil in a frying pan and lay out the formed pieces.

- Flour – 1.5 tbsp.

- Breadcrumbs – 1 tbsp.
- Salt - to taste.

Step 1. Pre-defrost the minced meat, and if you are using exclusively homemade, then grind the meat through a meat grinder.
Step 2. We “free” the boiled potatoes from the skin.
Step 3. Grind the potatoes using a grater, add eggs, salt and mix well.
Step 4. Add flour into the resulting mass in small portions until the dough stops sticking to your palms.
Step 5. Peel one large onion and finely chop it.
Step 6. Saute in heated vegetable oil until transparent.
Step 7. After, add some breadcrumbs to the frying pan.
Step 8. And brown the ingredients.
Step 9. Add the minced meat to the fried onion, “break” it into small pieces, sprinkle with salt and your favorite spices. Bring the meat to almost doneness.

Sorcerers made from mashed boiled potatoes turn out incredibly tender and airy; the soft texture of the vegetable dough gives the dish a unique taste and aroma. You will fall in love with the dish from the first bite, so we recommend preparing in advance!

- Minced meat – 400 gr.
- Brisket – 200 gr.
- Honey mushrooms – 200 gr.
- Eggs – 2 pcs.

- Flour – 3 tbsp.
Cooking process:
Step 1. Peel and wash the potato tubers. We prepare puree from half the vegetables, grate the second part on a fine grater (we burn off excess liquid) and mix into the finished puree with the addition of eggs, flour, salt and finely chopped onion. Refrigerate the resulting mass for 20 minutes.
Step 2. Without wasting time, prepare the filling: fry three finely chopped onions, chopped brisket and honey mushrooms in hot oil. As soon as the onion changes color, add the minced meat and cook for a couple more minutes.
Step 3. Use a spoon to scoop up a little chilled “dough”, form a flat cake, put a little filling and wrap it so that the minced meat remains inside. Roll the pieces in flour.
Step 4. Fry the sorcerers in vegetable oil on all sides until an appetizing crust forms.

- Potatoes – 5 pcs.
- Minced chicken – 200 gr.
- Flour – 2 tbsp.
- Egg – 1 pc.
- Vegetable oil – 2 tbsp.
- Sour cream - to taste.

- Ground black pepper - to taste.
- Khmeli-suneli - to taste.
Cooking process:
Step 1. Grind the potatoes using a fine-hole grater and squeeze out excess liquid.
Step 2. Add flour, egg, salt to the resulting mass and mix.
Step 3. Season the minced poultry with pepper, spices and salt. Stir well to distribute the seasonings evenly.
Step 4. Pour oil into the frying pan and heat it up, spread half of the potato dough with a tablespoon, forming pancakes.
