Croquettes are small balls rolled in breadcrumbs and fried until golden brown in a large amount of oil, that is, deep-fried. As a base, you can use both minced meat and vegetables. One of the most popular vegetables for preparing this dish is potatoes, which can also be supplemented with mushrooms or cheese. In addition, croquettes are even prepared from fish and lean dietary turkey meat.
Potato croquettes in a frying pan
Potato croquettes in a frying pan are small golden-brown balls that, when bitten, will surprise you with stretchy splashes of melted cheese, which is the perfect complement to delicate mashed potatoes, fried to a crisp in a large amount of butter.
- Potato 600 (grams)
- Butter 70 (grams)
- Cow's milk 30 (milliliters)
- Parmesan cheese (or other hard cheese) 100 (grams)
- Chicken egg 1 (things)
- Flour 2 (tablespoons)
- Breadcrumbs 70 (grams)
- Sunflower oil for frying
- Salt taste
-
We “free” the potato tubers from the skin, rinse them under running water and cut them into medium pieces, add water and boil for about half an hour after boiling until soft.
-
Drain the broth from the finished potatoes, add butter and mash into a puree, slowly pouring in the milk. Having achieved homogeneity, add salt to your taste and let it cool.
-
When the puree has cooled, add the coarsely grated cheese and mix well for even distribution.
-
Separate a small segment from the cheese and potato mixture, roll it into a ball and roll it in flour.
-
For the next layer of breading, beat the egg with salt and 2-3 tablespoons of water and immerse the workpiece.
-
Next, sprinkle the ball on all sides with breadcrumbs so that there is no empty space left.
-
We form croquettes in a similar way until the ingredients run out.
-
Pour a large amount of vegetable oil into a deep frying pan or ladle, heat and dip 3-4 semi-finished products. The balls should not touch each other.
-
Fry until golden brown, remove with a slotted spoon and blot with paper napkins.
-
Place it in a bowl and take a sample. Bon appetit!
