Kutya is a tasty cereal supplemented with various components. The “role” of the main ingredient can be not only rice, as we are used to, but also spelt, wheat or pearl barley - it all depends on your taste preferences. And in order to make the taste of the dish more rich, candied fruits, dried fruits, nuts or natural bee honey are used. This dish is prepared for various Christian holidays or for funeral tables.
Rice kutia for Christmas
Rice kutia for Christmas is the main dish of the Holy Evening, from which the feast begins, because before starting the meal, everyone must taste at least a few spoons of honey porridge with walnuts, dates and other dried fruits.
- Long grain rice 1 (glasses)
- Dried apricots 4 (things)
- Walnut 4 (things)
- Raisin ⅓ (glasses)
- Dates 150 (grams)
- Honey 4 (tablespoons)
- Water 4.5 (glasses)
- Salt 1 pinch

We thoroughly wash the cereal in several waters and place it in a saucepan, pour in three glasses of salted boiling water and cook over low heat for about 10 minutes.

Next, remove the pan from the stove, close the lid and let the rice sit for 10 minutes, then stir gently to prevent the boiled grains from sticking together.

Pour boiling water over dried fruits for a few minutes, then rinse and allow time to dry. Remove the pits from the dates.

Lightly fry the nuts in a dry frying pan, peel off the thin skins and grind to coarse crumbs in a blender or coffee grinder.

Place boiled rice in a bowl and mix with raisins.

Cut dates and dried apricots into small segments and add to the porridge.

Mix the kutya and flavor it with uncandied liquid honey.

Step 2. Pour boiling water over the raisins for 5 minutes and then rinse thoroughly. Boil the rice until tender with the addition of salt.
Step 3. Melt butter in a frying pan and fry granulated sugar and raisins.
Step 4. At the moment when the sugar has acquired a caramel color, remove the heat-resistant dish from the heat.
Step 5. Place sweet raisins in rice along with butter, mix thoroughly and serve.
Rice kutia with raisins and honey

- Water – 350 ml.
- Raisins – 40-50 gr.
- Poppy seeds – 1.5 tbsp.
- Honey – 2-3 tbsp.
- Nuts – 1-2 tbsp.
Cooking process:
Step 1. Carefully wash the grains in water until transparent.
Step 2. Pour the cereal into a saucepan, add water and bring to a boil. Immediately reduce the heat and cover with a lid, simmer for 10 minutes.
Step 3. Coarsely chop any nuts you like with a knife, soak the poppy seeds in boiling water, and rinse the raisins with water and dry.
Step 4. Place the raisins and poppy seeds on top of the cooked rice, without stirring, simmer on low heat for another 15 minutes under the lid.
Step 5. After time, flavor the porridge with chopped nuts and honey and mix.

Kutia from wheat
Wheat kutia is a sweet porridge that is prepared by all Slavic peoples for the Christmas meal or Easter church service. However, you can prepare this dish without any reason, because it has excellent taste characteristics and a pleasant aroma that even children cannot resist.
Cooking time – 2 hours 40 minutes
Cooking time - 20 minutes.
Portions – 6.
Ingredients:
- Wheat grains – 300 gr.
- Walnuts – 200 gr.
- Poppy – 100 gr.
- Honey – 5 tbsp.
- Salt – 1 pinch.
Cooking process:
Step 1.Pour the wheat into a pan of a suitable size, pour in cold water and stir thoroughly until the water becomes cloudy - drain it and repeat the manipulation until the water becomes clear.
Step 2. Having finished washing, drain the liquid again, making sure that all debris and debris are removed.
Step 3. Fill the cereal with clean water (ratio 1:2.5), bring to a boil and reduce the heat, boil until tender and add some salt.
Step 4. Leave the boiled porridge on the work table until it cools completely.
Step 5. Place the walnut kernels in a dry frying pan and heat for several minutes.
Step 6. Grind the poppy seeds in a coffee grinder or blender. We also recommend pre-soaking the ingredient in hot milk.
Step 7. Add poppy seeds and honey to the cooled wheat.
Step 8. Next add the aromatic nuts.
Step 9. At this stage, we adjust the thickness of the dish: if desired, add chilled boiling water. Bon appetit!

Rice kutia cooked in a slow cooker is a hearty and very tasty dish, which is often prepared on Christmas Eve. Rice porridge is usually supplemented with ingredients such as honey and dried fruits, but today we suggest you also add marmalade and ground cinnamon.

- Rice – 1.5 tbsp.
- Water – 3.5 tbsp.
- Honey – 2 tbsp.
- Raisins – 3 tbsp.
- Marmalade – 50 gr.
- Shelled nuts – 1 handful.
- Ground cinnamon – 1 tbsp.
Cooking process:
Step 1. Place the washed rice into the multicooker bowl, add water, add sugar and salt, and cook in the “Porridge” mode for 25 minutes.
Step 2. Prepare the additives.
Step 3. Wash the raisins thoroughly and steam in boiling water (5-10 minutes).
Step 4.In a deep bowl, mix honey with ground cinnamon and two tablespoons of water.
Step 5. Cool the boiled rice until warm.
Step 6. Add raisins and marmalade to the rice.
Step 7. Add nuts and stir.

Lenten kutia made from rice is traditionally prepared using natural bee honey and raisins; everyone uses other additional ingredients according to their own taste. This Slavic dish is prepared quite simply and quickly, the main thing is to cook the cereal correctly.

- Rice – 100 gr.
- Raisins – 100 gr.
- Water – 400 ml.
- Honey – 3 tbsp.
- Almonds – 50 gr.

Step 1. Prepare the products.
Step 2. Wash the rice, changing the water 5-7 times until it becomes clear.
Step 3. Pour two cups of boiling water over the cereal, add a little salt and boil over low heat until tender. If the boiled rice sticks together, rinse it with running water.
Step 4. Cool the porridge completely and put it into bowls.
Step 5. Soak the raisins in boiling water for about 10 minutes, rinse and dry, add to the rice.
Step 6. Season the kutya with honey and mix vigorously.
Step 7. Decorate the dish with almonds and place it on the table.

Kutia with poppy seeds is a tasty and easy-to-prepare dish that is traditionally prepared from rice cereal. However, today we present to your attention a recipe where the main component is spelled, and to diversify the taste we will use not only poppy seeds, but also dried fruits.

- Spelled – 100 gr.
- Poppy – 50 gr.
- Dried fruits – 200 gr.

Step 3. After 20 minutes, pour the poppy seeds into the pan and boil for another 5 minutes under the lid on low heat, let it brew.
Step 4. Pour boiling water over dried fruits and after 15 minutes rinse with water.
Step 5. Grind the dried fruits and combine with spelled.

Step 5. Mix the components thoroughly for even distribution.

Kutya with candied fruits is a real decoration for any festive table, which guests always appreciate. Candied fruits are an excellent addition to rice porridge, especially in combination with granulated sugar and raisins. Try it and see for yourself!

Step 2. Fill the cereal with water and cook on low heat for half an hour, add a little salt.
Step 3. After the time has passed, drain the rice in a colander.
Step 4. Pour boiling water over the raisins for 15-20 minutes, drain the liquid.
Step 5. Dissolve granulated sugar in a glass of boiling water and let it cool completely.
Step 6. Place a portion of rice in a serving dish and sprinkle with raisins.
Step 7. Add candied fruits to the porridge.

Kutya from pearl barley
Barley kutia is an incredibly tasty and aromatic dish that can be prepared both on the occasion of an Orthodox holiday, and simply to diversify your family’s usual diet. Despite the fact that pearl barley requires quite a long heat treatment, the result is definitely worth it.
Cooking time – 1 hour 30 minutes
Cooking time - 15 minutes.
Portions – 2.
Ingredients:
- Pearl barley – 100 gr.
- Raisins – 30 gr.
- Dried apricots – 30 gr.
- Prunes – 30 gr.
- Poppy – 30 gr.
- Honey – 2 tbsp.
Cooking process:
Step 1. Place all the dried fruits in a bowl.
Step 2. Pour boiling water over the ingredients, cover with a lid and leave for 10 minutes to soften.
Step 3. Then pat the raisins, dried apricots and prunes dry with napkins and cut into pieces of the desired size.
Step 4. Also soak the poppy seeds in boiling water for 10 minutes.
Step 5.After the time has passed, place the poppy seeds on a sieve and pour boiling water over them again, repeat the manipulation twice more, and then grind the component in a blender.
Step 6. We sort out the cereals and rinse them with water.
Step 7. Fill the pearl barley with water and leave for two hours.
Step 8. After the time has passed, wash the grains and fill them with water (1:3), and proceed to heat treatment.
Step 9. Bring the porridge to a boil and simmer over low heat for about an hour and a half.
Step 10. Add ground poppy seeds to the finished pearl barley.
Step 11. Flavor with honey.
Step 12. Next, add dried fruits.
Step 13. Mix the kutya thoroughly.
