Lagman over a fire in a cauldron is a delicious dish, mostly popular among the peoples of Central Asia. Lagman is a hot noodle dish prepared in a special way. The noodles are pulled out by hand to form a long string from a piece of dough. Lagman cooked over a fire adds a special atmosphere to a meal. Dishes cooked over a fire cannot be compared with anything else in their extraordinary taste. Hot lagman with meat and an abundance of vegetables warms and satisfies. There are a large number of variations of this wonderful dish, but I will tell you about my favorites.
Classic pork lagman in a cauldron over a fire
The classic pork lagman in a cauldron over a fire is eaten instantly. A balanced hot dish, somewhat reminiscent of a rich soup, cannot leave a single person indifferent. The appetizing treat is full of brightly colored vegetables and is pleasing to the eye.

Rinse half a kilogram of fresh pork under running water and dry with paper towels. Cut into pieces.

Wash the eggplant, bell pepper and carrots. Peel the eggplant and carrots with a vegetable peeler and chop them fairly large. Remove the bell pepper from the stalk and core and cut into pieces as desired.

Make a fire in advance so as not to waste time. Place the cauldron and pour in refined oil. Add the pork pieces and brown on all sides until caramelized.

Remove the peel from the onions, rinse and chop as desired. Add to the browned meat and fry until translucent.

Rinse the potatoes under water and peel the skins with a vegetable peeler. Cut as you like and place in a cauldron. Stirring the contents from time to time, fry.

Next, add carrots, bell peppers and eggplant. Stir and fry everything together. While the vegetables are cooking, peel the garlic and add to the cauldron to taste. If desired, crush the cloves using a garlic press.

Generously salt and pepper the vegetables. Then pour in enough water (preferably boiling water prepared in advance) so that the vegetables are completely covered with it. Taste for salt and add salt if necessary. Cover and cook until the vegetables are cooked.

Meanwhile, cook lagman noodles separately. I already have the noodles boiled. But you can cook it yourself. Then it will be even tastier, but longer in time. So, place the prepared noodles on plates and pour in the broth with vegetables and meat. Rinse your favorite greens and chop with a knife. Beef lagman in Uzbek style on a fire in a cauldron
Uzbek-style beef lagman over a fire in a cauldron comes out incredibly aromatic with a rich and bright taste. No gourmet will pass by this incredible dish. To save time, use ready-made noodles like I do. But if you want, of course, no one will forbid you to cook it yourself.

Ingredients:
- Beef – 700 gr.
- Onions – 2 pcs.
- Potatoes – 4 pcs.
- Carrots – 1 pc.
- Tomatoes – 4 pcs.
- Khmeli-suneli – 0.5 tsp.
- Noodles for lagman – 300 gr.
- Vegetable oil – 200 ml.
- Zira – 0.5 tbsp.
- Dried sweet paprika – 2 tbsp.
- Ground red pepper - on the tip of a knife.
- Ground black pepper - to taste.
- Salt - to taste.
- Dried tomatoes – 2 tbsp.
- Greens - to taste.
- Star anise – 5 stars.
Cooking process:
Step 1. Gather ingredients for a divine dish. Remove the peel from the bulbs. Rinse the tomatoes, make a cross-shaped cut and pour boiling water over them for a couple of minutes, then place them in cold water and remove the skins.
Step 2. Rinse 700 grams of beef under running water and dry with paper towels. Cut into pieces.
Step 3. Cut the peeled onion into half rings.
Step 4. Chop the peeled tomatoes in a way convenient for you.
Step 5. Light the fire in advance so you don't waste time. Place the cauldron and pour in refined oil. Add the beef pieces and brown on all sides to a caramel color.
Step 6. Next, add onion half rings to the golden brown meat and fry until translucent.
Step 7. Combine spices - dried tomatoes and paprika. Stir.
Step 8. Place in a cauldron.
Step 9: Cook everything together and let the flavors develop.
Step 10Add chopped tomatoes to the aromatic meat.
Step 11. Next, season with black and red pepper. Add suneli hops and cumin.
Step 12. Stir and simmer the meat in aromatic gravy.
Step 13: Now fill with water. This time it was not possible to boil it separately, so I used cold spring water.
Step 14. Next add star anise.
Step 15. Boil and simmer the dish for at least 40 minutes. To make the broth rich and rich, cook for about 1.5 hours. Salt well.

Lagman with lamb on the fire
Lagman with lamb over the fire is a magnificent treat that no self-respecting meat-eater will pass by. The ingredients were chosen simply brilliantly. A hearty and tasty dish will be most appreciated by the male half. And the fact that the dish is cooked over an open fire makes it even more appetizing and aromatic.

Ingredients:
- Lamb on the bone – 700 gr.
- Onions – 400 gr.
- Bell pepper – 1 pc.
- Carrots – 400 gr.
- Eggplants – 1 pc.
- Garlic – 1 head.
- Noodles for lagman – 600 gr.
- Vegetable oil – 200 gr.
- Zira – 1 tsp.
- Ground black pepper - to taste.
- Salt - to taste.
- Greens - to taste.
- Tomato paste – 100 gr.
Cooking process:
Step 1. Light the fire in advance so you don't waste time. Place the cauldron and pour in refined oil. Remove the peel from the onions, rinse and chop as desired. Place in a cauldron and fry until transparent.
Step 2. Half a kilogram of fresh lamb on the bone, rinse under running water and dry with paper towels. Divide into pieces of a convenient size for you and add to the onion. Cook everything together for about 15 minutes. Then add salt and pepper, add cumin.
Step 3. When the meat is nicely browned, season the contents of the cauldron with tomato paste and mix well.
Step 4. Rinse the carrots and peel the skins with a vegetable peeler. Cut into strips or cubes and throw into the cauldron with the meat.
Step 5. Rinse the colored bell pepper, remove the stem and core, cut into strips and add to the cauldron.
Step 6. Wash the eggplant, peel the skin with a vegetable peeler and cut into cubes, send to the meat with vegetables. Stir and fry everything together.
Step 10. Stir and fry for 5 minutes.
Step 11. Then add bell peppers and tomatoes.
Step 12. Stir well and cook for 5-7 minutes.
Step 13. It's the turn of the potatoes. Toss it in and salt it well.

Lagman with potatoes over the fire is an incredibly appetizing and very aromatic dish. An abundance of colorful vegetables turns the dish into a masterpiece that will remain in your memory forever. Rich lagman saturates and warms well in inclement weather. I often prepare this version of the dish at the end of the summer season, using vegetables I have grown myself.

- Tomatoes – 2 pcs.
- Eggplants – 1 pc.

- Noodles for lagman – 100 gr.
- Water - as much as needed.
- Vegetable oil – 50 ml.
- Seasoning for lagman – 1 sachet.
- Salt - to taste.
- Greens - to taste.

Step 2. Rinse 300 grams of fresh pork under running water and dry with paper towels. Cut into pieces.

Step 4. Wash the eggplants, sweet peppers and potatoes. Peel the potatoes with a vegetable peeler and chop them fairly large.Remove the bell pepper from the stalk and core and cut into pieces as desired. Cut the eggplant as you like. Peel the onion and garlic, rinse and chop as desired.
Step 5. Add chopped vegetables to the browned meat and fry too.
Step 6. Fill with water and close the lid, cook until the potatoes are almost ready.
Step 7. Wash the tomatoes, remove the skin if desired, pour boiling water over them. Cut as desired.

Lagman on the fire with radish is an extraordinary dish, which is full of bright colors and an abundance of delicious juicy vegetables. The elegant lagman, in my opinion, is one of the most interesting options that I managed to try. You simply must prepare this juicy dish and see for yourself.

Ingredients:
- Beef – 800 gr.
- Onions – 5 pcs.
- Tomatoes – 3 pcs.
- White cabbage – 200 gr.
- Potatoes – 2 pcs.
- Beets – 1 pc.
- Bell pepper – 1 pc.
- Carrots – 2 pcs.
- White radish – 1 pc.
- Garlic – 1 head.
- Egg noodles – 200 gr.
- Vegetable oil – 100 ml.
- Ground red pepper – 1 tsp.
- Ground black pepper – 1 tsp.
- Salt - to taste.
- Greens - to taste.
Cooking process:
Step 1. For convenience, list the ingredients in one place.
Step 2. Light the fire in advance so you don't waste time.
Step 3. Rinse the potatoes under water and peel the skins with a vegetable peeler. Cut as you like.
Step 4. Rinse the tomatoes. If desired, pour boiling water over it and remove the skin. Cut into approximately the same size as the potatoes.
Step 5. Rinse the radish under water and peel the skin with a vegetable peeler. Cut as you like.
Step 6. Remove the husks from the onions, rinse and chop as desired.

Step 22. Pour boiling water. Cook for half an hour.
Step 23. During this time, the vegetables will boil down sufficiently.
Step 24: Season with red pepper.

Step 26Add salt to taste. Rinse and chop the greens, throw them into the cauldron. Peel the garlic cloves and chop them in a convenient way - I use garlic cloves. Throw it into the cauldron.
