Lahmajun is a very tasty and aromatic oriental dish. It is based on a thin bread flatbread on which minced meat, vegetables and spices are laid out. The end result is something like pizza. Therefore, we definitely suggest that you prepare 4 versions of this dish.
Lahmacun in Turkish at home
The yeast dough is rolled out into thin flat cakes. Next, it is lightly greased with milk, topped with a filling of minced meat, bell peppers, tomatoes, hot peppers, tomato paste, parsley, onions and everything is baked in the oven for 6-7 minutes.

How to cook Turkish lahmacun at home? We start by preparing the dough. Pour the flour into a deep container, make a small depression in the center and add granulated sugar mixed with dry yeast.Next, pour in 1/3 of the warm water and gently mix everything in the center with a teaspoon, without touching the flour. Let it sit for 15 minutes for the yeast to activate.

Now add olive oil, salt, and the rest of the water. Grease your hands with vegetable oil and knead the dough with your hands for 4-5 minutes. Then we make a ball, transfer it to a separate container, cover it with a napkin and send it to a warm place for an hour so that the dough rises.

Fry the minced meat in a frying pan until tender with chopped onions. Next, transfer it to a blender bowl and add to it tomato, bell and hot peppers, parsley, tomato paste, salt and ground black pepper.

Grind everything for a minute so that it doesn’t turn out to be porridge.

Divide the dough into several parts, roll each into a thin layer no larger than 2 mm and transfer to a baking sheet covered with parchment paper. Next, lightly grease the dough with milk and distribute 2 tablespoons of filling on top.

Step-by-step recipe for making lahmajun with lamb

- Tomato paste – 1 tbsp.
- Tomatoes – 1 pc.
- Salt - to taste.
- Ground black pepper - to taste.
- Ground red hot pepper - to taste.
- Fresh parsley - to taste.
Cooking process:
Step 1. Place yogurt in a deep container, add soda, salt and mix everything thoroughly.
Step 2. Next, add flour and knead an elastic dough that does not stick to your hands. Cover it with cellophane or cling film and let it stand at room temperature for an hour.
Step 3. At this time, prepare the filling. Pass the lamb, onions, garlic and tomato through a fine sieve in a meat grinder. You need to do this at least 2-3 times. Add tomato paste, salt to taste, ground black and red pepper, chopped parsley to the resulting mass and mix everything well. You should get spicy minced meat.
Step 4. Divide the dough into balls the size of a walnut, cover them with cellophane and let stand for another 20 minutes. Next, roll out each ball into a thin layer, in accordance with the diameter of the frying pan, and spread the minced meat filling on top.
Step 5. Heat the cast iron frying pan well and bake the lahmacun in it without adding oil until cooked.

How to bake lahmajun with beef and cheese?
The yeast dough is rolled out into an oblong layer, and the filling of minced beef, onion, sweet pepper and tomato is placed on top. Next, the edges of the dough are folded, the filling is sprinkled with cheese and the whole thing is baked for 15 minutes.

- Salt – 0.5 tsp.

- Minced beef – 500 gr.
- Hard cheese – 30-50 gr.
- Tomatoes – 2-3 pcs.
- Sweet pepper – 2-3 pcs.
- Onions – 2 pcs.
- Salt - to taste.
- Spices - to taste.
- Vegetable oil - for frying.

Step 1. We start by preparing the dough. Break the eggs into a deep container, add vegetable oil to them and mix. Next, add yogurt, warm water, dry yeast, sugar, salt and mix everything thoroughly with a whisk.
Step 2. Then add the flour sifted through a sieve and knead the soft sticky dough. There is no need to knead it for a long time. Sprinkle it with flour, cover with a towel and let stand at room temperature.
Step 3. Heat vegetable oil in a frying pan, lightly fry the chopped onions in it, then add minced beef, salt, spices to taste and fry for another 7-8 minutes. After this time, add chopped sweet peppers to the minced meat, and after 6-8 minutes, add diced tomatoes. Simmer everything together for another 5-6 minutes and remove from heat.
Step 4. Divide the risen dough into 10 equal parts, each of which is rolled out into an oblong thin oval layer.
Step 5. Place the minced beef and vegetables filling on top.
Step 6. Now we wrap the edges of the dough, forming a “boat”.
Step 7. Transfer them to a baking sheet covered with parchment or greased with oil, and sprinkle only the filling with grated hard cheese.
Step 8. Preheat the oven to 230-250OC and bake the lahmajun for 15 minutes until golden brown. Transfer everything to a plate, cut into portions and serve. Bon appetit!
A quick and easy recipe for lazy lahmajun from pita bread
Minced meat is fried in a frying pan with onions, tomato paste and bell pepper. Next, everything is transferred to a ribbon of lavash, sprinkled with grated hard cheese, rolled into a roll, fried in a dry frying pan until golden brown and served.

- Bell pepper – 1 pc.
- Vegetable oil - to taste.

- Hard cheese – 100 gr.

Step 1. Heat the vegetable oil in a frying pan, add the minced meat there and fry it until cooked. During the process, you can add a little water to it so that when finished it will be more juicy.
Step 2. Next, add finely chopped onion to the minced meat and continue frying until it is soft; there is no need to brown it. Then add tomato paste, bell pepper and simmer for a few more minutes.
Step 3. Cut the pita bread into ribbons 10-15 cm wide. On each we place two tablespoons of minced meat with vegetables, sprinkle hard cheese grated on a coarse grater on top.
Step 4. Distribute the filling over the surface of the pita bread and wrap it into a neat roll.
