Cooking time – 1 hour 00 minutes
Cooking time - 15 minutes.
Portions – 2
Ingredients:
- Gherkins – 1 kg.
- Salt – 2 tbsp.
- Granulated sugar – 5 tbsp.
- Vinegar 9% – 100 ml.
- Currant leaves – 2 pcs.
- Oak leaves – 2 pcs.
- Horseradish leaf – 1 pc.
- Cherry leaves – 2 pcs.
- Garlic – 4 cloves.
- Mustard seeds – 1 tsp.
- Allspice peas – 5 pcs.
- Black peppercorns – 5 pcs.
- Cloves – 2 buds.
- Dill umbrella – 1 pc.
- Bay leaf – 1 pc.
- Celery - to taste.
- Water – 1.2 l.
Cooking process:
Step 1. Prepare spices and aromatic herbs. Rinse the greens and dry them on a towel. Peel the garlic. After inspecting the jars for damage and cracks, rinse and sterilize them along with the lids. After washing the gherkins, soak them in a bowl of cold water. For best results, wait 5 hours.
Step 2. Fill sterilized jars with soaked gherkins. At the bottom we put bay leaf, peppercorns, garlic, cloves and mustard seeds. We arrange the rows with leaves and herbs. If you have horseradish root, be sure to add a small piece. If you don't have celery, you can do without it.
Step 3. Pour in boiling water. Cover and leave for 10 minutes. In the meantime, prepare boiling water for the second pour. After the time has passed, pour the first water into a container for cooking the marinade. Add sugar and salt, and don’t forget about vinegar. Let's cook. Pour boiling water over the cucumbers a second time. Let sit while the marinade is prepared. When it boils, pour the liquid from the jars.
Step 4. Place a towel or cloth on the table. Place a glass container on top and fill it up to the neck with marinade. Pour carefully so as not to crack the vessel. It is better to preserve gherkins in small containers. Firstly, they are convenient to store. Secondly, once opened they do not take up much space in the refrigerator.Thirdly, they look beautiful and are suitable as a gift.
Step 5. Holding it, roll it up with a machine. When using containers with threads, inspect for chips and use new screws. This guarantees tightness, and also that the preservation will not explode and will be well preserved. Lids that have already been used do not provide a guarantee.

Step 7. We move the cooled seams to a cabinet with winter supplies or a cool room like a cellar or basement. In winter, every jar is valuable. You have absolutely never tasted such delicious cucumbers. Once you make gherkins using this recipe at least once, it will become your favorite.
Step 8. Sweet cucumbers are good on their own, so how to apply the preservation is up to everyone to decide for themselves. We use canned gherkins to prepare complex dishes, as an independent snack or as a component of various treats. Bon appetit!
