3. Apple slices are cut very finely. You can, as an option, scroll them in a meat grinder or grate them. The mass is transferred to a saucepan and simmered on low heat on the stove.
4. Pectin from apple seed pods along with 200 gr. sugar is added to the mass of chopped apples. Mix everything and continue to simmer, increasing the heat to medium, until the slices are soft (25 minutes). It is important to stir the contents of the pan regularly to prevent the apples from burning. If there is not enough liquid to extinguish, you can add a little water.
5.Blend the mass with a blender or grind through a sieve to make it as homogeneous as possible, and add the remaining 400 grams of sugar. Continue cooking over low heat so that the puree slowly boils down and reduces in volume. The mass will be ready when it begins to move away from the walls and holds its shape.
