Mochi made from rice flour is an interesting dessert originally from Japanese cuisine and has its own simple preparation technology. For mochi, the dough is mixed with special rice flour “motigome” (ordinary rice flour is not suitable for mochi), powdered sugar and water, and kept in the microwave, which makes it very plastic and elastic. The classic Japanese dessert “Mochi” made from rice flour can be easily prepared at home. Immediately measure out the basic set of ingredients according to the proportions of the recipe.

Pour rice flour and powdered sugar into a separate bowl and mix well.

Mochi in a frying pan at home is prepared similarly to the options in the microwave, only the dough is mixed with other ingredients and brewed in a frying pan with constant stirring. The filling is chosen according to the taste preferences of the hostess. In this recipe, we mix mochi dough with special rice flour, milk, sugar and vegetable oil.

- Rice flour – 170 gr.
- Sugar – 130 gr.
- Milk – 250 ml.
- Vegetable oil – 4 tsp.
- Vanilla extract – 1 tsp.

Cooking process:
Step 1. Pour milk into a cast iron frying pan, heat well, without bringing to a boil, and completely dissolve the sugar in it.
Step 2. Pour vegetable oil into this mass, add vanilla and, if desired, any food coloring, mix everything well and remove the pan from the stove.
Step 3. Pour the required amount of rice flour into the hot mixture and knead the dough with a spatula until it has a homogeneous texture.
Step 4. Then place the frying pan with the dough on low heat. Spread over the surface with a spatula, bring to a boil and then brew with constant stirring until it comes together into a smooth and homogeneous mass.
Step 5. Sprinkle the countertop with starch, transfer the boiled dough onto it, roll it out a little, cover with film and let cool completely.
Step 6. Roll out the cooled dough into a thinner cake and cut into equal squares. Place a little filling on each one, and in this Nutella pasta recipe, form the mochi with your hands.

- Corn starch – 30 gr.
- Sugar – 20 gr.
- Milk – 210 ml.

Step 1. Pour the amount of dry ingredients indicated in the recipe into a mixing bowl suitable for the microwave: rice flour, sugar, cocoa powder and starch. Mix them well with a spoon.
Step 2. Then pour milk into this mixture and knead the dough until it has a liquid, homogeneous texture. Cover the dish with a piece of cling film and place in the microwave for 2 minutes, turning it on at maximum power.
Step 3. Then remove the dough from the microwave, mix well with a spoon, cover with film and put back for another 2 minutes.

A quick Mochi recipe in the microwave will allow you to prepare this wonderful dessert for your morning coffee or tea. In this version, we prepare mochi based on special rice flour, water and sugar. On average, flour and water are taken in a 1:1 ratio, but you can change it and make softer or denser mochi. We prepare mochi without filling, and use pink dye.

Step 1.Keep any ice cream chosen for mochi for 10 minutes at room temperature until it melts, put it in small molds, for example, for ice or for eggs, and freeze it back.
Step 2. In a microwave-safe bowl, knead the dough from glutinous rice flour, water and sugar. The dough should be liquid, homogeneous and the sugar should dissolve completely.
Step 3. Then cover the dishes tightly with a piece of cling film and microwave for 2 minutes at maximum power.
Step 4. Next, remove the film, mix the dough well, cover it again with film and put it in the microwave again for another 30 seconds.
Step 5. Wrap the cutting board with film.
Step 6: Sprinkle it generously with cornstarch as the cooked dough is very sticky.
Step 7. Place the prepared dough in an even layer on the board on top of the starch and cool.
Step 8. Sprinkle the top layer of dough with starch as well.
Step 9. Divide the cooled dough into 10 equal pieces.

Step 3. Peel the banana and cut into 10 equal circles.
Step 4. Transfer the brewed and cooled dough onto a work surface sprinkled with starch, divide into 10 pieces and shape them into flat cakes. Place a teaspoon of cream cheese and a mug of banana on each flatbread.

Homemade strawberry mochi
Mochi with strawberries is easy and quick to prepare at home, and the dessert is not only tasty, but also beautiful when cut. The dough for mochi with strawberries is also colored pink, and the berries are supplemented with either raw creamy curd or bean paste, but this turns out to be another type of mochi, called “daifuku”.

- Powdered sugar – 50 gr.
- Food coloring – 2-3 drops.

Cooking process:
Step 1.Place the amount of rice flour, powdered sugar and water specified in the recipe in a microwave-safe bowl and knead the dough until smooth and semi-liquid. Then add a couple of drops of dye and mix again until the dough turns a rich pink color.
Step 2. Cover the dish with a piece of cling film and make several punctures in it. Place the dough in the microwave for 50 seconds, turning on maximum power.
Step 3. Then remove the dishes from the microwave, mix the dough well, cover with film and put in the microwave for another 50 seconds. The dough should be elastic, dense and similar to plasticine, so the brewing process can be repeated again.
Step 4. Cool the brewed dough, transfer it to a table top sprinkled with starch and roll it into a sausage. The dough is quite sticky, so it is better to wear gloves and sprinkle them with starch.
Step 5. Then divide the dough into 10 identical pieces, roll them in starch and roll them into thin flat cakes. Place 2 teaspoons of cream cheese and one strawberry on each piece.
Step 6: Use your hands to carefully form the mochi, wrapping the dough around the filling and sealing the edges tightly.

Mochi made with rice flour turns out to be a dietary dessert in itself, but for the PP version, sugar is replaced with natural sweeteners: erythritol or stevia. The filling for PP mochi without sugar is any fresh berries or fruits that can be supplemented with cottage cheese. In this recipe we prepare mochi with strawberries.

- Sugar substitute - to taste.
- Food coloring – 2-3 drops.

Step 1. Rinse the strawberries well under running water, dry with a napkin and remove the sepals.
Step 2. Pour rice flour with sweetener into a glass or ceramic bowl, according to the proportions of the recipe, pour out water, add a few drops of food coloring and knead the dough until smooth. Cover the dishes tightly with film. Place the dough in the microwave at full power for 3 minutes. Stir the dough with a spoon every 30 seconds. The brewed dough should be thick and sticky.
Step 3. Then cool the brewed dough. On a worktop sprinkled with starch, divide the dough into 10 pieces and roll them into thin round cakes.
Step 4: Place one strawberry on each tortilla, fold and seal the edges of the dough to form round mochi. It's good to roll them in starch.

Rice flour mochi with mascarpone
Mascarpone cheese, with its taste and texture, goes well with rice flour mochi. This dessert is not difficult to prepare at home. Mascarpone in the filling is often supplemented with other ingredients and in this recipe we will add cream, white chocolate and pieces of any fruit. Brew the dough in a frying pan.

- Glutinous rice flour – 100 gr.
- Water – 150 ml.
- Powdered sugar – 15 gr. + for deboning.
- Vegetable oil – 15 ml.

- Corn starch – 5 gr.
For filling:
- Mascarpone cheese – 150 gr.
- Cream 33% – 40 ml.
- White chocolate – 80 gr.
- Fruits - to taste.
Cooking process:
Step 1. Pour the required amount of rice flour with powdered sugar into the bowl for kneading the dough, according to the recipe, and pour in a spoonful of vegetable oil.
Step 2. Then add a couple of drops of food coloring or a little of any berry juice, mixing the berries with water to make 100 ml. liquids. Knead the dough until smooth.
Step 3. Heat the frying pan and pour the kneaded dough into it. Brew the dough over low heat with constant stirring with a spatula for 10 minutes.
Step 4. After this time, the dough should be elastic and homogeneous.
Step 5. Transfer it from the frying pan to a cutting board sprinkled with starch, cover with film and cool.
Step 6. For the filling, transfer the Mascarpone cheese to another bowl, pour the cream into it and stir with a spoon until smooth.
Step 7. Then add melted white chocolate with pieces of any fruit to this mass and mix well again.
Step 8. Transfer the prepared filling into a cooking bag and place in the refrigerator for 15-20 minutes to become denser.
