Georgian cucumbers for the winter are a variant of a popular salad preparation of Caucasian cuisine based on sliced fresh cucumbers stewed in tomato sauce, the taste of which is complemented by a large amount of spicy herbs, garlic and pepper. Tomatoes are selected that are ripe, with rich color and aroma. All ingredients are taken fresh and of high quality. Vinegar is used for preservation. Georgian cucumbers for the winter in jars
Georgian cucumbers in jars for the winter are prepared simply and quickly. This cucumber preparation will be a bright and chic appetizer on your winter table. In this recipe, we make tomato filling from fresh tomatoes. From the spices we take garlic, suneli hops and hot pepper. We cook without sterilization. Pre-soak the cucumbers for a couple of hours in very cold water.

- Tomatoes 600 (grams)
- Garlic 6 (parts)
- Salt 25 (grams)
- Seasoning "Khmeli-Suneli" 5 (grams)
- Ground red pepper taste
- Table vinegar 9% 60 (milliliters)

It is very easy to prepare Georgian cucumbers for the winter. Pre-soaked cucumbers, preferably small ones, rinse well under running water, dry with a napkin and cut into thin slices.

Cut the tomatoes crosswise, scald with boiling water, remove the peel and cut the pulp into cubes.

Then puree the tomatoes using a blender or meat grinder.

Pour the tomato puree into a saucepan special for stewing, dissolve the amount of salt specified in the recipe in it, add suneli hops and hot pepper, stir and simmer over low heat for 10 minutes.

Georgian cucumbers with tomato paste for the winter
In the classic version, Georgian cucumbers are cooked in fresh tomato sauce, but it can be replaced with tomato paste or tomato sauce, which will be easier. Georgian cucumbers differ from those pickled with tomato paste, having a sharper spicy taste. In this recipe, we take two types of ketchup (plain and spicy, and plain can be replaced with tomato paste) and add a lot of garlic. We prepare a snack without sterilization.
Cooking time: 1 hour 15 minutes.

Ingredients:
- Cucumbers – 3 kg.
- Vegetable oil – 250 ml.
- Tomato paste/ketchup – 250 gr.
- Spicy ketchup – 250 gr.
- Garlic – 2 heads.
- Salt – 1.5 tbsp.
- Sugar – 180 gr.
- Vinegar 9% – 100 ml.
- Water – 125 ml.
Cooking process:
Step 1. Pour clean water with vegetable oil into a container special for stewing, according to the proportions of the recipe, add salt and sugar and mix well.
Step 2. Add hot and regular ketchup or tomato paste to this mixture.
Step 3. Using a spoon, mix these ingredients into a homogeneous mass.
Step 4. Rinse the cucumbers well and cut each into 4 longitudinal slices, although the shape of the cut may be different.
Step 5. Place the sliced cucumbers in a saucepan with tomato sauce and place over medium heat.
Step 6. Bring this mixture to a boil while constantly stirring.
Step 7. Then cover the pan with a lid and simmer the cucumbers over low heat for 25 minutes.
Step 8. During this time, stir the cucumbers periodically to prevent them from burning.
Step 9. Peel the garlic cloves and chop through a garlic press.
Step 10. Towards the end of the stewing, add the chopped garlic to the cucumbers in the tomato, stir the mass again and turn off the heat after 7-10 minutes. One minute before the end of the stewing, pour in the vinegar.
Step 11. During stewing, the cucumbers will give enough of their juice and the marinade will cover them completely.
Step 12. Sterilize small jars with lids in any way and take their volume at your discretion.
Step 13. Place the hot cucumbers in jars and completely fill with the remaining marinade.
Step 14. Then the standard scheme: seal the jars hermetically, put them on the lids and cool under the “fur coat”.

- Salt – 1/2 tbsp.
- Sugar – 2 tbsp.
- Vinegar 9% – 25 ml.
- Vegetable oil – 3 tbsp.
Cooking process:
Step 1. Immediately prepare, according to the proportions of the recipe and the volume of workpiece you need, vegetables and a set of spices.
Step 2. Wash the tomatoes and cut into pieces. Peel the garlic. Grind these vegetables using a blender or meat grinder into a homogeneous mass. Pour the required amount of vegetable oil and vinegar into it and add salt, sugar, hops-suneli and hot pepper. Mix this mass well.
Step 3. Wash the cucumbers, dry with a napkin and cut into cubes.
Step 4. Pour the prepared tomato sauce into a stewing pan, bring to a boil and cook over low heat for 10 minutes to make it thicker.
Step 5. Place the sliced cucumbers into the boiling sauce and simmer over low heat while stirring for 7 minutes.
Step 6. Dry sterilize a half-liter jar with a lid, since from the specified amount of ingredients you will get 0.5 liters of the product. Place the cucumbers in a jar, pour in the filling, seal tightly and cool upside down, covering with a towel. Georgian cucumbers for the winter with tomatoes and garlic are recognized as the classic and most delicious version of this preparation. Small cucumbers and fleshy ripe tomatoes are selected for it. This recipe shows the proportion of vegetables, spices, oil and vinegar for a large volume of preparation, and the set of spices is taken according to personal taste. For such cucumbers, a mixture of coriander, suneli hops and ground peppers is most often added.

Cooking process:
Step 1. Immediately prepare the vegetables for this preparation and their quantity can be reduced, maintaining the proportion of the recipe. Rinse cucumbers and tomatoes under running water and remove excess moisture with a napkin.
Step 2. Cut the tomatoes into small pieces.
Step 3. Then twist them through a meat grinder with a medium grid. You can puree them with a blender, but the mass will be more liquid.
Step 4. Pour the tomato mass into a saucepan for stewing. Pour vegetable oil into it, add the calculated amount of salt and sugar and mix well.
Step 5. Bring the tomato to a boil over high heat, then reduce the heat to minimum, cover the pan with a lid and simmer the mixture for 20 minutes until it becomes thicker.
Step 6. During this time, cut the cucumbers into circles no less than 0.5 cm thick, so that the crispy taste is retained in the workpiece.
Step 7. Add chopped garlic through a garlic press to the boiled tomato mass, pour in vinegar and stir.
Step 8. Place the sliced cucumbers into this mixture.
