Also, to give the dish originality, sturgeon is not only fried and baked, but also stuffed and supplemented with vegetables.
Sturgeon baked whole in the oven
Sturgeon baked whole in the oven is a dish ideal for adding variety to your usual diet. Tender meat goes well with onion slices and sour lemon, and to prevent the fish from sticking to the foil, we recommend adding a small amount of olive oil.

To speed up the process and for our own convenience, we prepare the products according to the list of ingredients.

We douse the carcasses with hot water, remove the entrails and spines.

Sprinkle the gutted sturgeon with lemon juice and salt, and leave for soaking.

Place two sheets of foil on top of each other, place onion rings in the middle, and pour a little olive oil.

We make cuts on the ridge of the fish and insert half rings of lemon, place the sturgeons separately from each other on a vegetable “cushion”.

Place the pieces in a heat-resistant bowl and put them in the oven at 200 degrees for 10 minutes, then reduce the heat to 160 degrees.

After 20 minutes from the start of heat treatment, unroll the foil.

Ingredients:
- Sturgeon – 1 pc.
- Soy sauce – 1-2 tbsp.
- Lemon – 1 pc.
- Rosemary – 7-8 sprigs.
- Olive oil – 6-7 tbsp.
- Flour – 2 tbsp.
- Salt – 1 pinch.
- Granulated sugar – 1 tsp.
- Ground black pepper – 1 pinch.
Cooking process:
Step 1. Cut off the head, tail and fins of the sturgeon, make an incision in the abdomen and remove the entrails.
Step 2. Pour boiling water over the prepared carcass.
Step 3. Peel off the skin by prying it with the tip of a knife.
Step 4. Cut the fish into small pieces. This way the marinating process will take much less time.
Step 5. Squeeze the juice from the lemon into a bowl and mix with soy sauce, olive oil and black pepper - grease the sturgeon and add sprigs of aromatic herbs.Cover with film and place in the refrigerator for at least 2 hours.
Step 6. Line a baking sheet with foil and lay out the soaked fish.
Step 7. Cover with foil and put in the oven for 20 minutes at 180-190 degrees.
Step 8. Meanwhile, prepare the sauce: pour two or three tablespoons of oil into a saucepan and add flour.
Step 9. Mix the ingredients until smooth and add the marinade that is left over from the fish, and also add a little water.
Step 10. Season the sauce with sugar, salt and black pepper and boil until thick.
Step 11. Generously pour the rich sauce over the hot sturgeon and serve along with a side dish and vegetable salad. Bon appetit!

Sturgeon soup at home is a hearty and rich soup that captivates with its transparency and richness of taste. Even a novice cook can handle preparing such fish soup, and as a result you will get real gastronomic pleasure!

- Sturgeon (tail + head + pulp) – 650 gr.
- Potatoes – 2 pcs.
- Carrots – ¼ pcs.

- Black peppercorns – 10 pcs.
- Dill (umbrella) – 1 sprig.
- Butter – 30 gr.
- Water – 1 l.
- Salt - to taste.
Cooking process:
Step 1. To prepare the soup, prepare the head, tail and any other parts of the sturgeon.
Step 2. Place the fish in a pan, also add an onion (half), large segments of carrots, peppercorns, bay leaves and a sprig of dill - fill with water and boil for half an hour from the moment of boiling, removing the noise.
Step 3. At the same time, peel and dice the potatoes and the remaining onion.
Step 4.Remove fish, vegetables and spices from the finished broth. Strain the broth itself through a fine sieve.
Step 5. Return the saturated broth to the burner, add the potatoes and onions and cook for 20-25 minutes.
Step 6. After the time has passed, add the remaining raw fish to the pan and boil until cooked (cooking time depends on the size, on average 7-8 minutes).
Step 7. Return the tail and head to the finished soup, add some salt, focusing on your taste preferences.
Step 8. Place the desired amount of fish into the tureens, pour in the broth and add a slice of butter.

- Potatoes – 5 pcs.
- Large onion – 1 pc.
- Large carrots – 1 pc.
- Eggs – 1 pc.
- Green onion - 5-6 feathers.
- Dill – 1 bunch.
- Flour – 2 tbsp.
- Olive oil – 2-3 tbsp.
- Salt - to taste.
- Ground black pepper - to taste.
Cooking process:
Step 1. Peel and wash the onions and carrots, chop them in any convenient way and sauté in oil until soft, add salt.
Step 2. Boil the peeled potatoes in salted water until tender, mash them into a puree with the addition of eggs, flour and chopped green onions - let them cool a little.
Step 3.Dust the work surface with flour and lay out the ingredients in layers in the following order: potatoes, sauté and chopped dill.
Step 4. Gut the fish and rinse thoroughly under running water, rub with salt and black pepper inside and out.

Sturgeon baked with potatoes is an easy-to-prepare, but at the same time, incredibly tasty dish that you can easily offer to guests and have no doubt that someone will leave hungry. During heat treatment, the fish soaks the vegetable slices - you'll lick your fingers!

Ingredients:
- Potatoes – 1 kg.
- Sturgeon – 1 kg.
- Onion – 2 pcs.
- Lemons – 1 pc.
- Parsley – 2 sprigs.
- Spices for fish – 1 tbsp.
- Salt - to taste.
- Ground black pepper - to taste.
Cooking process:
Step 1. Clean the fish, cut along the belly and take out the insides - rinse.
Step 2. Cut off the spines from the back; to make the task easier, we recommend pouring boiling water over the carcass.
Step 3. Rub the fish with spices, black pepper and salt - stuff it with one onion, previously cut into half rings.
Step 4. Next, add chopped parsley and chopped half a citrus into the belly.
Step 5. We also cut the second onion into rings and distribute it over the bottom of a heat-resistant dish, placing the fish on top.Sprinkle the back with salt, seasoning and pepper.
Step 6. Peel the potatoes and cut them into arbitrary slices, arrange them around the sturgeon, add salt and pepper.
Step 7. Bake the food at 180 degrees for 60 minutes.
Step 8. After an hour, remove the pan from the oven and let it cool slightly.

- Sturgeon (fillet) – 400 gr.
- Sunflower oil – 2 tbsp.
- Flour – 4 tbsp.

Step 1. First remove the fillet from the freezer and give it time to completely melt at room temperature.
Step 2. Cut the piece into slices no more than 5 millimeters thick, salt and pepper on both sides - move to the refrigerator shelf for 15 minutes.
Step 3. Dip each slice thoroughly in flour and place in a frying pan with hot oil.
Step 4. Fry sturgeon on both sides over moderate heat until golden brown.

Sturgeon shish kebab on the grill is a great way to diversify your picnic and treat yourself to not only tasty, but also very healthy fish.The secret of success lies in the “correct” marinade, which includes lemon, white wine, adjika and onions.

Ingredients:
- Sturgeon – 1 kg.
- Onion – 1 pc.
- Lemon – 1 slice.
- Dry white wine – 75 ml.
- Vegetable oil – 3 tbsp.
- Dry adjika - to taste.
- Salt - to taste.
Cooking process:
Step 1. Cut the gutted fish into steaks about 3 centimeters thick and rinse thoroughly under water until not a trace of mucus remains.
Step 2. Remove the thick skin.
Step 3. Cut the fillet from the spinal bone.
Step 4. Cut the pulp into cubes of about 2-3 centimeters.
Step 5. Place the fish in a deep bowl of a suitable size.
Step 6. Add onion half rings and salt.
Step 7. Knead thoroughly with your hands and mix.
Step 8. Now squeeze out the juice from the lemon, add dry adjika.
Step 9. Pour white wine over the ingredients, stir and, covering with a lid, put in the cold for several hours to marinate.
Step 10. After time, drain off the excess marinade, add a couple of tablespoons of oil and stir for even distribution.
Step 11. Thread the sturgeon onto skewers and fry over hot coals for about 10-15 minutes. Bon appetit!
Balyk from sturgeon at home
Sturgeon balyk at home is a real delicacy, for which stores charge a lot of money, but why overpay if everything is prepared very simply and quickly? Of course, you have to wait for the fish to salt and dry, but the end result is definitely worth the time!

Ingredients:
- Sturgeon fillet – 1 kg.
- Juniper berries – 2 pcs.
- Salt - to taste.
- Ground black pepper - to taste.
Cooking process:
Step 1. Gut the fish and cut it into two parts along the ridge, separate the fillet from the bones and cartilage.
Step 2. Pour salt (1 centimeter), mixed with berries and black pepper, onto the bottom of a glass dish with a lid, and place fish on top.
Step 3. We also cover the sturgeon with salt on top, cover with a lid and put it in a cold place for 5-7 days. If the fillet is large and the fish has a high fat content, then we increase the salting to 10-15 days.
Step 4. After about a week, remove the fillet from the salt “shell” and soak it in cold water for a time equal to salting (for example, if the fish has been salted for 6 days, then it should be soaked for 6 hours). The water must be changed every half hour. Then we hang the sturgeon in a warm and dry place for 1-2 days for drying.
Step 5. Cut the finished balyk into thin slices that literally glow in the light and serve it to the table in combination with butter, lemon and black bread - enjoy.

Sturgeon aspic
Sturgeon aspic is a truly festive dish that will put you in a good mood not only thanks to its beautiful appearance, but also to its amazing taste. Sturgeon in itself is very nutritious and aromatic, but supplementing it with olives, olives and fresh parsley you get a real masterpiece!

Ingredients:
- Sturgeon – 1 kg.
- Onion – 1 pc.
- Carrot – 1 pc.
- Water – 1 l.
- Laurel leaf – 2 pcs.
- Lemon – ½ pc.
- Gelatin (in sheets) – 2 pcs.
- Olives (pitted) – 1 handful.
- Olives (pitted) – 1 handful.
- Parsley – 1 bunch.
- Dill – 1 sprig.
- Salt - to taste.
- Sweet peas - to taste.
Cooking process:
Step 1. Prepare the products according to the list.
Step 2. Peel the vegetables, also clean the fish and cut into portions (we recommend initially cutting into steaks and then in half). We cut the onion into two parts, the carrot into rings.
Step 3. Place chopped vegetables, sturgeon, peppercorns, salt and bay leaves into a saucepan, pour in water and cook until all ingredients are ready.
Step 4. Strain the fish broth and let it cool until warm. Dissolve the gelatin in water according to the instructions and pour into the cooled broth.
Step 5. Place fish and boiled carrots in a deep form, also add lemon slices and chopped olives, garnish with parsley and pour in broth with gelatin.
Step 6. Place the container in the cold until completely frozen.
Step 7. Serve the festive aspic and take a sample. Bon appetit!
Royal sturgeon in the oven
Royal sturgeon in the oven is a moderately fatty and incredibly tasty fish stuffed with lemon and onions. During baking, we recommend that you add a couple of potatoes - this vegetable will be an excellent addition that will perfectly dilute the rich fishy taste.

Ingredients:
- Sturgeon – 1.4 kg.
- Potatoes – 5 pcs.
- Salt – ½ tsp.
- Ground black pepper – ½ tsp.
- Lemon – 1 pc.
- Onion – 3 pcs.
- Provençal herbs - to taste.
Cooking process:
Step 1. Thoroughly wash the fish, thawed in cold water, to remove mucus and gut it. We cut out the gills and pull out the strings, making an incision at the tail.
Step 2. For the filling, peel and cut the onions into rings; do the same with citrus fruits.Coat the prepared carcass with oil and sprinkle with aromatic herbs, salt and pepper inside and out.
Step 3. Stuff the sturgeon with onion and lemon (you can also add salt and pepper to the filling if desired) - place it on a baking sheet.
Step 4. Place several thoroughly washed potatoes next to the fish and place the baking sheet in the oven, heated to 200 degrees for 60 minutes.
