- Small lemon – 2 pcs.
- Chopped garlic – 1.5 tbsp.
- Chopped dill – 2 tsp.
- Salt – 1 tsp.

- Oregano – 1 tsp.
- Ground coriander – ½ tsp.

Step 1. First of all, prepare, according to the recipe, all the ingredients for baking halibut. Thaw fish fillets in advance and cut into steaks up to 3 cm thick. Peel and rinse the vegetables. Sweet peppers, can be of different colors, cut into large slices. Cut the onion into half rings.
Step 2. Pour olive oil into a separate bowl, add spices, salt and add the zest and juice of two small lemons.Mix everything with a whisk until smooth.
Step 3. Prepare a baking sheet with high sides. Place all vegetables in sequence using a slotted spoon into the sauce and place one by one on a baking sheet.
Step 4. After the vegetables, add pieces of halibut fillet to the sauce, mix and place on a baking sheet next to the vegetables.
Step 5. Place the sliced onions in an even layer on top of the halibut. Sprinkle everything with salt and black pepper.

Step 1. Thaw the halibut carcass in advance, clean, rinse and rub with a mixture of salt and black pepper. Leave it for half an hour. During this time, peel and rinse the potatoes and onions.
Step 2. Cut the onion into thin half rings. Cut the potatoes into slices, place in a separate bowl, add 2/3 of the amount of sour cream, salt and black pepper and mix.
Step 3. Line a baking sheet or baking dish with a large sheet of foil.Place half the potatoes in sour cream and chopped onions in it in layers.
Step 4. Place the prepared halibut carcass on top of the vegetables and brush with the rest of the sour cream. Place the other half of the onion slices on top of the fish.
Step 5. Turn on the oven at 180°C. Wrap the foil tightly. Bake the halibut and potatoes for 45 minutes.

Step 1. Thaw the pieces of fish in advance, rinse and boil in water with added salt and bay leaf for 20 minutes.

Step 1. Clean the medium halibut carcass, defrost in advance, remove the fins and rinse under running water.
Step 2. Then cut it into portions, sprinkle with salt and black pepper and leave while the sauce is prepared.
Step 3: Peel the garlic and take the white parts of the green onions.
Step 4. Finely chop the onions and garlic cloves with a knife.
Step 5. Wash the parsley, separate it into stems and leaves. Finely chop the stems.
Step 6. In a separate saucepan, bring the cream to a boil, add chopped parsley stems with onions and garlic.Cook the cream sauce over low heat without a lid until 1/3 of the liquid has evaporated.
Step 7: Finely chop the parsley leaves and prepare a stick of butter.
Step 8. Add salt to the boiled cream to your taste and turn off the heat. Dissolve butter in sauce.
Step 9. Then add chopped parsley leaves to this sauce and stir. The creamy sauce for the halibut is ready.
Step 10. Cut the foil according to the number of halibut pieces and place the fish on them.

Cooking process:
Step 1. Thaw the halibut carcass trimmings in advance, rinse them, place them in a saucepan for cooking fish soup, cover completely with cold water and bring to a boil.
Step 2.Peel the carrots and onions, cut into medium pieces and transfer to the boiling soup. Add to it a pinch of dry vegetables, salt and bay leaf with black peppercorns. Cook the fish soup over medium heat, without covering the pan with a lid, for 20 minutes from the start of boiling.
Step 3. Using a slotted spoon, transfer the pieces of cooked halibut to a plate and remove all the bones.
Step 4. Continue cooking the fish soup until the carrots become very soft.
Step 5. Then turn the heat to minimum, pour cream into the fish soup and transfer the pieces of halibut, leaving the most beautiful fish soup in plates for serving. Turn off the fire.
Step 6. Pour the prepared halibut soup into soup cups, add pieces of fish with chopped parsley or cilantro and serve the dish for lunch. Bon appetit!
Grilled halibut
Grilled halibut is a great way to prepare this delicious fish. High temperature and fast frying preserve as much as possible all the beneficial properties of halibut and add sweetness to the white meat. There are different marinades for halibut; in this recipe we prepare a marinade based on honey and lemon.

- Halibut fillet – 450 gr.
For the marinade:
- Melted butter – 2 tbsp.
- Honey – 2 tbsp.
- Lemon – ½ pc.
- Soy sauce – 2 tsp.
- Ground pepper – ½ tsp.
- Garlic – 2 cloves.
- Lemon wedges for serving.
Cooking process:
Step 1. First, preheat the grill to 200°C.
Step 2. Place all the marinade ingredients specified in the recipe in a separate bowl. Add chopped garlic, squeeze the juice from half a lemon.
Step 3. Mix these ingredients thoroughly until smooth.
Step 4.Use a sharp knife to remove the skin from the thawed halibut fillet, but you can leave it as it will become crispy without grilling.
Step 5. Using a silicone brush, apply the prepared marinade to the fillet on both sides.
Step 6. Then place the marinated fillet on a preheated grill and fry for 5 minutes on one side. It is better to control the frying time with a timer.
Step 7. Using tongs, turn the fillet over to the other side and fry for another 5 minutes.
Step 8. Transfer the fried fillet to a metal plate and leave for another 5 minutes.

Tender and almost boneless halibut meat is excellent for making cutlets. Cutlets are prepared in the same way as other fish. In this recipe, we do not add a loaf to the cutlets; we use an egg and corn starch as binding ingredients. Let the fried cutlets simmer a little in tomato sauce. We make minced fish using a blender.

- Corn starch – 2 tbsp.
- Salt - to taste.

- Wheat flour for breading – 2 tbsp.
- Tomato paste – 1 tbsp.
- Vegetable oil - for frying.
Cooking process:
Step 1. Wash the pre-thawed halibut fillet, cut into pieces and place in a blender bowl. Add chopped onion to it and break the egg.
Step 2. Then add two tablespoons of cornstarch, salt and black pepper and add finely chopped parsley.
Step 3.At medium speed, grind these ingredients into homogeneous minced meat, and select the degree of grinding to your liking.
Step 4. With wet hands, form small identical cutlets from the prepared minced meat and roll well in flour.
Step 5. Fry the cutlets in heated vegetable oil until golden brown on both sides. Then dilute a spoonful of tomato paste in ½ cup of warm water, pour over the fried cutlets and simmer them over low heat under the lid for another 5 minutes.
