To prepare real panna cotta, you should choose heavy cream - 30-33%. The ideal option is to get natural vanilla, but this is not very cheap and is not always available, so use vanillin or vanilla sugar.

- Granulated sugar 100 (grams)
- Water 50 (milliliters)
- Gelatin 18 (grams)

How to prepare panna cotta according to the classic recipe at home? Pour pre-purified water into a deep container and add gelatin to it. Let it swell for 15-20 minutes. Then we gradually heat it, but do not bring it to a boil, so as not to lose the gelling properties (on the stove or in the microwave).

Pour milk into a saucepan and add vanilla and regular sugar. Add heavy cream and put the pan on the fire. Stir the mixture with a whisk and bring to a boil. Then we turn off the fire.

After a couple of minutes, when the mixture has cooled, we begin to gradually pour gelatin into it. At the same time, constantly stir the mass. Gelatin should completely dissolve.

Pour the hot mixture into special molds or bowls. Leave the dessert at room temperature to cool. Then put the molds in the refrigerator.

4. Pour the resulting mass into pre-prepared silicone molds or glasses if molds are not available. Leave the panna cotta to cool at room temperature. Then place in the refrigerator for 4 hours.
5. Take the panna cotta in the molds out of the refrigerator. To release the dessert from the mold, we use a toothpick: carefully move the edges of the mold with it, and then help it completely separate from the jelly. We turn the molds with dessert over and easily remove them. Place the panna cotta on plates and decorate with berries or syrup.

2. Pour cream into the pan and place the container on the stove. Heat them slightly over medium heat, and then add the lemon zest and the chocolate pre-disassembled into small pieces. Stir the mixture until it is completely dissolved and immediately turn off the heat. If you heat the mixture longer, the chocolate will curdle and thereby ruin the taste of the dessert.
3. If you soaked gelatin in the plates, then you should squeeze them out slightly and only then put them in the pan. Stir the mixture until the gelatin dissolves. Pour into molds. Place the dessert in the refrigerator for a couple of hours.

Place the pan on the stove.Over medium heat, gradually heat the mixture and stir until the gelatin is completely dissolved. Turn off the stove if we notice the first signs of boiling liquid. Let the mixture cool for 1 hour.
2. Now let's make the base for the dessert. Pour milk, vanilla and the second half of gelatin into a separate pan. Place the pan on low heat and stir constantly while heating. When the milk starts to steam, turn off the stove. Give the mixture time to cool.
3. Pour the cream into a deep bowl and beat it for 1-2 minutes until fluffy at high speed.
4. For now, put the cream aside. Take another deep container and put sour cream in it. Add sugar and mix the ingredients. Add whipped cream to the mixture and mix until smooth with a mixer at low speed. Still whisking, add warm milk in small portions. Mix the mousse by hand for 30 seconds.
