How to prepare a classic “Moscow” bun with sugar from yeast dough at home? In a deep bowl, combine warm milk, water and granulated sugar (1 tablespoon) - mix thoroughly until the sweet crystals are completely dissolved. Next, add yeast (if using dry yeast, you will need about 7-8 grams) and put it in a warm place for 10-15 minutes.

Break the egg into a bowl and beat.

Melt 50 grams of butter in a water bath or in a microwave oven and cool.

Add two teaspoons of egg to the yeast mixture and mix (we won’t need this egg again).

Transfer the mixture to a floured work surface and continue kneading with your hands. As a result, we should have an elastic dough that practically does not stick to our hands.

Place the lump on a plate, cover with a damp towel or cling film and put it in a warm place for an hour and a half.

Place the fluffy mass on the table and knead.

Divide the dough into 12 equal parts.

Let's start forming the buns.Roll each part into a thin cake, approximately 10 by 15 centimeters in size.

Lubricate the workpieces with pre-melted and cooled butter and sprinkle with granulated sugar.

Place the delicacy on a sheet of baking parchment paper at a short distance from each other and put it in a warm place to proof for 10-15 minutes.

Let's prepare everyone's favorite delicacy - heart-shaped buns or in other words - Moscow bun based on fluffy yeast dough. We prepare from the simplest and most affordable products that can easily be found on the shelves of every grocery store, and you will certainly be satisfied with the result!
Cooking time – 2 hours 40 minutes
Cooking time - 20 minutes.

Ingredients:
- Milk 3.2% – 265 ml.
- Yeast (dry) – 13 gr.
- Granulated sugar vanilla/vanillin – 1 sachet.
- Salt – ½ tsp.
- Eggs – 2 pcs.
- Granulated sugar – 100 gr.
- Butter – 50 gr.
- Vegetable oil – 80 gr.
- Flour – 650 gr.
Cooking process:
Step 1.In a deep bowl, mix warm milk (leave one tablespoon), yeast, vanillin, salt, one whole egg and one white (leave the yolk for greasing), vegetable oil (7 tablespoons) and granulated sugar - mix well.
Step 2. Slowly add flour and knead a soft dough that does not stick to your hands (you may need a little more or a little less flour).
Step 3. Next, add two more tablespoons of vegetable oil and knead the dough again. We form a ball, place it seam side down in a large bowl and put it in a warm place under cling film for 60-90 minutes.
Step 4. Over time, the mass increases several times.
Step 5. Place the risen dough on the table, previously coated with oil, and divide it into two equal parts. Cut each part into 6 more pieces.
Step 6. Roll the pieces into balls and put them in a warm place for another 15 minutes.
Step 7. Then roll each ball into a flat cake and grease with melted butter, sprinkle with two teaspoons of granulated sugar.
Step 8. Form the buns. Roll the flatbread into a roll, bend it in half and place it on its side, lightly pressing it to the surface.
Step 9. Using a knife, make a cut on the fold, but not reaching the end about one and a half to two centimeters.
Step 10. Turn the edges in two directions, forming a heart.
Step 11. Place the pieces on parchment and give about 20 more minutes to proof in a place without drafts.
Step 12. Grease the risen buns with a mixture of beaten yolk and a tablespoon of milk. Send to bake for 20-25 minutes at a temperature of 180-190 degrees.

Step 5. Roll into a tight roll.

Step 9. Lay the second edge overlapping the first.
Step 10. Bend the tube in half.
Step 11. Using a sharp knife, make a cut on the opposite side of the fold.
