Saburani – 6 recipes at home

Saburani is a traditional and beloved dish of Ossetian cuisine. The dish is a multi-layer pie made from homemade dough and filled with several types of cheese. As a rule, suluguni or Adyghe cheese is used for cooking, and mozzarella is used for a more neutral taste. The most painstaking task for cooks is preparing the dough, however, this process can be simplified by using Armenian lavash or semi-finished puff pastry as a basis.

  • Adyghe cheese – 400 gr.
  • Hard cheese – 100 gr.
  • Butter – 100 gr.

Step 5. Pinch off a piece of dough, a little more than a fifth, and roll it into a thin layer. We divide the remainder by 4 and proceed in the same way. We use two pans. In one pan there is boiling water. In another pan there is ice water. Dip the workpieces into boiling water for half a minute and then immediately immerse them in ice water. We place the wheat “plates” in a colander, and then blot them with a paper towel without disturbing the integrity.

Step 6. Line the baking pan with baking paper and place the largest flat cake as shown in the photo.

Step 7. Sprinkle the bottom of the cake with cheese shavings, without compacting it.

Step 8. Rub some frozen butter on top, it will add incredible juiciness.

Step 9. Cover the filling with a sheet of dough and repeat the layers. We lift the hanging edges and cover the filling.

Step 10. Add a handful of grated butter to the top, make shallow cuts and move the workpiece to the oven: 30-40 minutes at 160-180 degrees.

Step 11. Serve saburani with a golden crust to the table “piping hot” and enjoy. Bon appetit!

Lazy saburani lavash pie

Saburani with cottage cheese

Step 3. After half an hour, divide the dough into 5 pieces (one should be slightly larger than the rest), roll into the thinnest flat cakes.

Step 4. Place each piece in boiling water for a minute, and then quickly transfer it with a slotted spoon to a container with ice water. Blot off excess moisture.

Step 5. Line a baking dish with parchment or flavor it with butter, cover the bottom with the largest layer so that the edges extend beyond the sides. Using a pastry brush, grease with melted butter and spread some of the grated cheese and cottage cheese. Cover the filling with a second flatbread and repeat the manipulation.

Step 6. Cover the last layer with the free edges, bake for 30 minutes (15 minutes at 200 degrees in convection mode, and then at 180 without the fan running).

Step 7. Cut the juicy and appetizing pie and immediately take a sample. Bon appetit!
