Classic rice paper spring rolls
The classic version of spring rolls, or rather, there is no filling for them. Considering the eastern origin of the dish, shrimp filling can be considered a classic. It is traditionally complemented with fresh vegetables, avocado, rice noodles and sauce. The constant components of this dish are rice paper, a bamboo mat (makis) and a sauce for serving. In this recipe we will take large tiger prawns and fry them in aromatic oil.

Spring rolls can be easily prepared at home. Place the shrimp in a separate bowl in advance, cover with water at room temperature and leave to defrost.

In this recipe, fry the chicken fillet for the filling. As a vegetable set, we take cucumber with carrots, sweet peppers, arugula and apple. Add the filling to the sauce.

Step 1. First of all, prepare all the ingredients according to the recipe. Peel the carrots. Rinse the vegetables. Dry the arugula with a napkin. Take chicken fillet at room temperature. Rinse it and dry it as well.
Step 2. Cut the fillet into two lengthwise pieces and brush with vegetable oil.
Step 3. Cut the baking paper into two large squares. Heat a dry frying pan over low heat. Place the fillet pieces on paper and fry in a frying pan for 5 minutes on each side until golden brown.Let the fried fillet rest a little so that the meat remains juicy.
Step 4. Cut the prepared vegetables and apple into thin strips with a knife or using gadgets. Sprinkle the apple slices with lemon juice. Fry the chopped carrots and sweet peppers in hot oil for 3 minutes. Also cut the cooled fillet into thin strips.
Step 5. For the sauce for the filling, in a bowl, mix mayonnaise with mustard, soy sauce, black pepper and chopped garlic.
Step 6. Place sheets of rice paper one by one in hot water for a couple of seconds and place them on a board or mat. On each sheet, carefully place arugula, sliced chicken fillet and vegetables with an apple. Drizzle a little mayonnaise sauce over the filling.

Step 2. Place sheets of rice paper in warm water one at a time for a few seconds until they become soft.

Mushrooms, along with vegetables, seafood and meat, are a good filling for spring rolls. In many recipes, mushrooms are complemented with chicken and various vegetables, but in this recipe we use only champignons fried with onions. Sheets of rice paper soaked in water become elastic and can be used to beautifully wrap the mushroom filling. The dish is prepared simply and quickly.

- Onions – 1 pc.
- Vegetable oil – 3 tbsp.

Step 1. Immediately prepare all ingredients for spring rolls according to the recipe.
Step 2. Peel the champignons, rinse and cut into small pieces of any shape.
