Soup with meatballs made from minced beef, and even supplemented with vegetables and small pasta, is exactly the dish that will easily add something new to your usual lunch menu. You don’t need to spend half a day cooking, and the result is beyond praise!
- Ground beef 300 (grams)
- Potato 500 (grams)
- Bulb onions 150 (grams)
- Carrot 150 (grams)

Soup with minced meat is very easy to prepare.Place the minced meat in a plate with high sides, add semolina, salt and black pepper and stir to distribute the spices evenly.

Wet your palms in water and make meatballs, slightly smaller in size than an apricot.

Remove the skins from the onion and cut into small cubes.

Grind the peeled carrots on a borage grater.

Remove the skins from the potato tubers, rinse and cut into medium-sized slices.

Pour the required amount of water (about two liters) into a pan of a suitable size, bring to a boil and add the potato slices.

Step 1.To prepare the meatballs, in a working container, combine chopped garlic, half a glass of cereal, minced meat, salt and pepper - mix thoroughly and coat a little right in the plate. We form blanks.
Step 2. Pour water into the pan and carefully lay out the semi-finished beef products, turn on the heat and be sure to get rid of the resulting foam using a slotted spoon.
Step 3. Peel and wash the vegetables, cut the potatoes into large segments, and cut the carrots into half rings.
Step 4. We “free” the onion from the husk and cut it as shown in the photo. Place the mixed vegetables and remaining rice into the broth and cook for half an hour. Before turning off, season with salt and chopped herbs.

- Minced beef – 250 gr.
- Potatoes – 3 pcs.
- Onion – 1 pc.
- Garlic – 2 teeth.
- Cream 15% – 200 ml.
- Butter – 50 gr.
- Hard cheese – 30 gr.
- Ground sweet paprika – 1 tsp.
- Salt – 1 tsp.
- Granulated sugar – 1 tsp.
- Ground black pepper – 1-2 pinches.
- Parsley – 3 sprigs.
- Italian herbs – 1 pinch.
- Lettuce – 2 leaves.
- Water – 1.5 l.
Cooking process:
Step 1. Before starting cooking, peel the onion and garlic and defrost the minced meat.
Step 2. Rinse the parsley with water, shake off excess moisture and chop.
Step 3.Melt 25 grams of butter in a frying pan and lay out the minced meat, and also add granulated sugar, herbs, ground pepper, salt, sweet paprika and aromatic herbs.
Step 4. Add the contents of the frying pan with garlic (one clove), passed through a press, stir, breaking up lumps, and simmer for 5-6 minutes.
Step 5. At the same time, boil water and add potato cubes, cook until soft. We also heat the remaining oil in a frying pan and sauté the chopped onion and garlic until golden brown.
Step 6. Punch the finished potatoes directly in the broth with a submersible blender until the consistency of mashed potatoes.
Step 7. Add sautéed vegetables to the resulting mixture, bring to a boil and cook for 2-3 minutes.
Step 8. Now pour in the cream, boil again and keep on fire for another 5 minutes.
Step 9. After the time has passed, put the minced meat into the pan and cook for about 10 minutes from the moment it boils. We also take a sample and add salt.
Step 10. Turning off the heat, leave the food covered for about 10 minutes and proceed to serving: pour into portioned plates and decorate with grated cheese and lettuce leaves.

In heated oil, fry the carrots and onions until soft and golden, put them in a saucepan and add the potatoes (save 1/4 of the potatoes for another step), pour in hot broth and bring to a boil, cook for 10 minutes.
Step 2. At this time, pass the fillet and remaining potatoes through a meat grinder, beat in the egg.
Step 3. Season the minced meat with black pepper and salt and knead.

- Garlic – ½ head.

- Boiling water – 2 l.

Cooking process:
Step 1. Pour a little sunflower oil into the frying pan and fry the minced meat for 20 minutes, stirring frequently.
Step 2. Meanwhile, peel and chop the vegetables. Finely chop the garlic, cut the onion into half rings, pepper into strips, and hot pepper into rings.
Step 3. After 20 minutes from the start of cooking the meat, add garlic, onion and hot pepper to the pan. Also add spices, mix well and simmer for about 5 minutes.

Step 3. When the potato cubes become soft, carefully add the meatballs into the pan.

Cooking process:
Step 1.Remove the peel from the carrots, rinse and grate on a grater with large holes.
Step 2. Fry the orange chips in hot oil until lightly golden.
Step 3. In a separate frying pan, saute the chopped onion until golden brown, divide into two parts.
Step 4. Add an egg to the minced meat, add salt and pepper, add ½ of the aromatic onion, knead and form small round meatballs.
Step 5. Pour water into the pan and, bringing it to a boil, add the fried ingredients, add some salt and boil again. Now add the meat balls and boil for 8 minutes after boiling.
Step 6. And while the broth is cooking, peel and chop the potatoes.

- Vegetable oil – 4 tbsp.
- Laurel leaf – 1 pc.
- Greens - to taste.
- Salt - to taste.
- Tomato paste – 1 tbsp.
Cooking process:
Step 1. In a saucepan of a suitable size, heat two tablespoons of oil and fry the minced meat until it changes color, breaking up the lumps.
Step 2. After 10 minutes, add peeled potatoes, cut into cubes, to the meat - stir and fry for 5 minutes.
Step 3.At the same time, chop the onion and bell pepper, sauté in the remaining oil until the onion slices are transparent and soft.
Step 4. Pour boiling water over the minced meat and potatoes, add a clove of garlic cut in half and boil for 15 minutes. Afterwards, discard the garlic and add tomato paste, mix and cook for another 10 minutes from the moment of boiling.
Step 5. Next, transfer the sautéed vegetables into the pan.
Step 6. Next we send the cabbage, cut into cubes. Bring to a boil again and cook for another 15 minutes over medium heat.
Step 7. When all the ingredients are almost ready, add salt to the soup and season with bay leaf. Keep on fire for another 5 minutes and turn off, removing the bay leaf.
Step 8. To enhance the aroma, add chopped herbs and let the soup sit under the lid for 10-15 minutes.

Step 1. Fill the washed peas with water and boil for about 15 minutes.
Step 2. Now add the minced meat to the peas and cook for 5 minutes.
Step 3. Without wasting time, cut the peeled potatoes into pieces.
Step 4.Throw the slices into the broth and wait another 10 minutes.
Step 5. Then, grate the carrots on a grater with small holes, cut the onions into quarter rings.
