How to prepare samsa dough at home? Add salt to warm water and stir.

Sift the flour into a separate deep bowl.

Wrap it in cling film and place it in the refrigerator for 40 minutes.

Without wasting time, let's start with the filling: cut the meat and lamb fat into small cubes.

In a plate with high sides, combine the lamb and lamb fat.

Cooking process:
Step 1. In a deep bowl, mix flour, water and salt - knead soft unleavened dough. Form a ball, cover with a towel and let rest for 20-30 minutes at room temperature.
Step 2. After half an hour, roll out the flour base into a layer about half a centimeter thick and generously grease it with melted butter - roll it into a tight roll.
Step 3. Cut the “sausage” into 16-18 pieces of the same size. Place the pieces cut side down and put them in the cold for an hour.
Step 4. For the filling, in a separate plate, mix the minced meat with small pieces of fat tail and onion, add spices and salt - mix. Roll each segment of dough into a flat cake, add the meat component and pinch the edges in the shape of a triangle. Place the “pies” on a baking sheet, seam side down.
Step 5. Lubricate the workpieces with beaten yolk, season with sesame seeds and place in the oven for 30-45 minutes at a temperature of 160-180 degrees. Bon appetit!

Often, triangular oriental “pies” - samsa - are prepared from the simplest unleavened dough, however, you can try to prepare this dish using yeast dough. The taste characteristics will remain the same, but the wheat base will be more airy and fluffy.

- Flour – 5 tbsp.
- Kefir – 1.5 tbsp.
- Egg – 1 pc.
- Salt – 1.5 tsp.
- Granulated sugar – 1 tbsp.
- Butter – 150 gr.
- Yeast (dry) – 1 tsp.
- Egg yolk – 1 pc.
- Sesame – 1-2 tbsp.
- Meat (lamb or beef with lard) – 600 gr.
- Onions – 4 pcs.
- Ground black pepper - to taste.

Cooking process:
Step 1. In a bowl with high sides, combine room temperature kefir, sugar, salt, yeast and egg.
Step 2. Mix the ingredients thoroughly and gradually add flour.
Step 3. Knead the dough, cover it with a cotton towel and put it in a warm place without drafts for 10 minutes.
Step 4. When the dough “rises”, cut the lump into two equal parts and roll into rectangular layers.
Step 5. Grease one layer with butter at room temperature and cover with a second sheet, coat with oil again.
Step 6. Roll the dough into a tight roll and divide it into two halves - put it in the refrigerator.
Step 7. For the filling, finely chop the meat and onion, mix in a separate bowl, salt and season (for more juiciness, if desired, you can add a few tablespoons of cold water)

Any baked goods made with kefir are incredibly tender and tasty, and samsa, of course, is no exception. In order for this dish to be tasty not only inside, but also outside, we will prepare an airy yeast dough from the simplest ingredients.

Step 1. We begin cooking by preparing the dough: in a large bowl, mix two tablespoons of flour, a tablespoon of sugar, yeast and kefir - leave in a warm place until bubbles appear on the surface, this reaction will mean that the yeast is activated. After that, add sour cream, salt, egg, melted butter and add flour in portions.
Step 2. Knead a soft and pliable dough, cover with cling film or a towel and put in a warm place for 50 minutes.
Step 3. Punch down the risen dough and roll it into a layer about 3-4 millimeters thick.
Step 4. Let's start with the filling: season the minced boiled beef with salt and ground pepper according to your preferences and mix thoroughly.

Step 6. Cover the filling with dough, forming a triangle, and press the edges tightly with the tines of a fork to securely adhere.

When you want to surprise your guests and family, we prepare a classic of oriental cuisine - triangular pies with meat filling called “samsa”. Although the process of making homemade dough is somewhat labor-intensive and time-consuming, the results are definitely worth it!

- Granulated sugar – 1 tsp.

- Onion – 3 pcs.

Step 1. In a deep container, combine flour, baking powder, granulated sugar, salt and butter at room temperature - grind until fine crumbs form.
Step 2. Add sour cream to the dry mixture and beat in the egg.
Step 3. With clean and dry hands, knead the elastic dough. Cover the wheat lump with cling film and refrigerate for 20 minutes.
Step 4. Without wasting time, prepare the filling: cut the beef pulp into small pieces or grind it through a meat grinder.
Step 5.Add finely chopped onion, salt and pepper to taste to the resulting minced meat and mix.
Step 6. Remove the chilled dough from the refrigerator and divide it into two equal parts.

Step 1. Prepare the dough: combine sour cream with boiled water and salt - add to the sifted flour and knead the dough. Let it brew for about half an hour, and then roll it out into a thin layer and roll it into a roll - put it in the refrigerator for 60 minutes.
Step 2. Without wasting time, let's start filling: remove the peel from the onion and use a blender or food processor to grind it to a puree.
Step 3. Add the resulting slurry to the minced meat along with salt, pepper and a couple of tablespoons of cold water.

Step 3. Knead the dough and form a bar, put it in a bag and put it in the refrigerator for at least an hour (overnight is possible).
Step 4. For the filling, mash the boiled potatoes and mix with finely chopped onions and fried in vegetable oil, season with salt and ground pepper according to your preferences.
