Let's prepare truly royal jam, which the Queen was still in love with: an emerald-colored delicacy brewed from slightly unripe sweet gooseberries without a single seed. This dessert takes time, since it is necessary to extract the seeds from each berry, however, as a result, we get incredibly tasty and aromatic jam.

- Granulated sugar 1 (kilograms)
- Water 5 (glasses)
- Vodka 50 (milliliters)
- Vanilla pod 1 (things)
- Lemon acid 1 (teaspoons)

How to make royal (emerald) gooseberry jam? We thoroughly rinse the slightly greenish berries under running water and place them in a colander, allowing excess liquid to drain. Afterwards, we cut each berry and, armed with a small spoon, take out every seed without exception.
-
Place the prepared component in a large container and fill it with very cold water (it is also advisable to add ice), leave at room temperature for about 5-6 hours.
-
After the time has passed, boil five glasses of water with cherry leaves and citric acid in a saucepan - boil for five minutes and strain. Add vanilla bean, sugar and vodka to the hot broth and stir until the sweet crystals are completely dissolved.
-
Drain the cold water from the berries and pour them into the syrup, leave for about 15 minutes, and then put on the fire: bring the future jam to a boil and cook for 10-15 minutes.
-
Pour the finished treat into pre-sterilized jars and close with sterile lids. Place the jars upside down, cover with a towel and leave in this position until completely cooled, about a day. Afterwards, we move the workpieces to a storage location.
-
We eat transparent gooseberry jam with spoons or spread it on a crust of white bread and enjoy. Bon appetit!
