Step 1. We arm ourselves with a tenderizer and “beat” the washed and dried meat on both sides.
Step 2. Place the duck in a deep bowl and marinate in chopped garlic, rosemary, salt, pepper, orange zest and juice - refrigerate for 60 minutes.
Step 3. Fry the fillet soaked in additives until golden brown in a hot frying pan.
Step 4. Place the golden meat in foil and add fresh rosemary, orange pulp, and also sprinkle with marinade. Wrap in foil and bake for 10-30 minutes (depending on the desired degree of doneness) at 200 degrees.
Step 5. For the sauce, in a saucepan, mix the orange pulp and the fat released during frying - evaporate the liquid over low heat.
Step 6. Now add wine and orange juice, evaporate slightly and add honey and butter. Keep on fire for a couple more minutes and remove.
