Classic royal cheesecake with cottage cheese in the oven is very easy to prepare. Before starting the process, measure out the required amount of all components using a kitchen scale.

Three pre-frozen butter on a borage grater.

In a deep plate, mix sifted flour, granulated sugar, salt and soda.

Add the oil and quickly grind it into crumbs. Cover the mixture with cling film and place it on the refrigerator shelf.

To prepare the filling, use an immersion blender to beat the cottage cheese, two types of sugar and eggs until smooth.

Grease a baking dish with vegetable oil and pour in ½ crumbs, pressing with your fingers to shape the bottom and sides.

Spread the curd filling onto the base in an even layer, sprinkle with the rest of the “dough” and bake for 45-60 minutes in an oven preheated to 180 degrees.

Ingredients:
For the test:
- Milk – 150 ml.
- Dry fast-acting yeast – 7 gr.
- Granulated sugar – 90 gr.
- Salt – 1/3 tsp.
- Vanillin – 1 gr.
- Eggs – 2 pcs.
- Butter – 60 gr.
- Flour – 450-500 gr.
- Vegetable oil - for greasing the mold.
For filling:
- Cottage cheese – 300 gr.
- Sour cream – 100 ml.
- Granulated sugar – 100 gr.
- Egg white – 1 pc.
- Starch – 1 tbsp.
- Vanillin – 1 gr.
- Frozen berries – 50 gr.
Additionally:
- Milk – 1 tbsp.
- Egg yolk – 1 pc.
Cooking process:
Step 1. Prepare the dough: slightly warm the milk, beat in the egg and add sugar and salt - beat with a whisk or fork.
Step 2. Separately mix flour with yeast and add handfuls to the warm milk mixture, also gradually stir in softened butter.
Step 3. Mix the ingredients with a spoon, and then proceed to manual kneading. Knead the dough for at least 10 minutes, adding a little more flour if necessary. Coat the container with vegetable oil and lay out the lump, cover with film and send to a warm room to rise.
Step 4. At the same time, beat the ingredients of the filling with a blender: cottage cheese, sugar, egg white, sour cream, vanillin and a little starch.
Step 5. Roll out the risen base into a round cake, about a centimeter thick. Stepping back about 5 centimeters from the edge, we make another circle (see photo).
Step 6. We cut the edge, as shown in the photo, and “braid” the pigtail.
Step 7. Press the “pigtail” onto the dough, cover the workpiece with a towel or film and leave to proof for half an hour.
Step 8. After time has passed, press the decor back onto the base and place the sweet curd mass in the center.
Step 9. Decorate the cheesecake with berries, coat the dough with beaten yolk and milk - cook at 180 degrees for 20 to 30 minutes.
Step 10. Cut the slightly cooled dessert into portions and start drinking tea. Bon appetit!

Step 1. We start cooking with the dough: mix flour with salt and sugar, add chilled butter cubes and grind the mixture into crumbs.
Step 2. Beat in the egg and knead the dough (if the mass does not form a lump, then add 1-2 tablespoons of water). We form a ball and wrap it in cling film, put it in the refrigerator for an hour or in the freezer for half an hour.
Step 3. Without wasting time, let's start with the filling: carefully break the eggs and separate the whites from the yolks. In a separate container, knead the cottage cheese with sugar and vanilla.
Step 4. Add chicken yolks and knead a little more.
Step 5. Whip the whites with a whisk until a light foam forms on the surface.
Step 6. Carefully and slowly fold the egg whites and lemon zest into the curd mass with a spatula.
Step 7. Place the chilled dough between two sheets of parchment and roll it into a thin flat cake, put the filling in the middle without touching the edges.
