It is not always possible to find out what sausages are made of. And with this recipe I am 100% sure.

Ham is easy to prepare at home. So, all we need is chicken meat, salt and favorite spices. I do not recommend using chicken fillet for ham - the ham will turn out dry.

I use chicken drumstick meat.I remove the skin, veins and bones from the drumsticks and cool them well in the refrigerator. It's best to leave it in the refrigerator overnight. Cut the chicken into manageable pieces.

Using a meat grinder, grind a quarter of the chicken pieces. I have an electric device, so it turns out quickly. You can add a few cloves of garlic if you wish, but I use dry garlic.

Using your hands, mix the minced meat thoroughly and quickly. It is important that the meat remains cold. If it gets warm, refrigerate it.

Let's start creating the product itself. Line the ham pan with a food bag. A baking sleeve can also easily cope with this function.

Fill the ham pan with minced meat and press down with a spoon so that there is no air.

Tighten the springs. Refrigerate the ham maker for 3 hours. I leave it overnight.

Step 2: For the ham, it is best to use the brisket and shoulder. There should be about a quarter of the total fatty pork, cut it into small pieces. Cut the spatula into larger pieces.
Step 3. Place the meat in a bowl, salt with regular and nitrite salt. Pour in cold water. Using your hands, knead the minced meat thoroughly and quickly. It is important that the meat remains cold. If it gets warm, refrigerate it. You want it to be a viscous mass that sticks to your hands.
Step 4. Add your favorite spices. I have dried garlic and ground pepper. Mix well again.
Step 5. Let's start forming the product itself. Prepare the shell. It can be found in specialized stores or online stores.
Step 6. Fill the shell with cold water to soften it.
Step 7: The casing can be filled by hand. For convenience, I use an electric meat grinder with a special attachment. I tie the ends with silk thread or twine.
Step 8. Next, place the ham in a saucepan with water. It is important that the ham is completely covered with water. Put it on fire. Bring the water to 50 degrees. Cook the ham for 3 hours. Then increase the heat to 80 degrees and cook for another 1.5 hours.
Step 9After the specified time, carefully remove the ham and place it in ice water. Leave for 10 minutes. Remove from water and cool at room temperature. Cut the flavorful ham into thin slices. Serve to guests.

Step 4. Place the minced chicken in a bowl with the prepared meat. Add gelatin, generously salt, and season with your favorite spices - paprika, dried garlic, nutmeg and ground pepper. Chop the pre-washed parsley and add to the meat.
Step 5. Using your hands, knead the minced meat thoroughly and quickly. You want it to be a viscous mass that sticks to your hands.
Step 6. Let's start forming the product itself. Fill the baking sleeve with minced chicken.Tamp down so that there is no air.
Step 7. Tie the ends tightly on both sides with twine. And tie, forming a loaf of ham.
Step 8: Place the ham in a steamer rack. And in turn, place it on the pan, after pouring water into it.
Step 9: Close the lid. Put it on fire. Cook at medium temperature for about half an hour. And then on low heat for 15 minutes.

Step 13. Hang the prepared loaves on the balcony for 10 hours, then hang them at room temperature for 6 hours.
Step 14. Next, place the ham in a saucepan with water. It is important that the ham is completely covered with water. Put it on fire. Bring the water to 80 degrees and cook for about two hours.
Step 15. After a while, carefully remove the ham and place it in ice water. Leave for 30 minutes. Remove from water and cool at room temperature. Refrigerate to stabilize for 8 hours.

Step 4. After the sound alert, open the lid and cool slightly. Carefully remove the meat and carefully separate it from the bones.
