Fried lagman is a classic Central Asian dish characterized by homemade, stretchy noodles, assorted vegetables and fresh meat. As a rule, beef or lamb is used for cooking, however, in modern realities, chefs allow poultry and pork to be used as a basis - it all depends on your preferences. As vegetables, sweet bell peppers, radishes and eggplants are traditionally added. It is also customary to sprinkle a sufficient amount of spices into this dish: red pepper, garlic and much more.

Rinse the beef with water and cut into fairly thin strips.

Heat the oil in a frying pan and fry the meat until the color changes, add a little water and cover with a lid.

At the same time, we arm ourselves with a vegetable peeler and remove the peels from potatoes and carrots. Peel the onion.

Finely chop the washed and dried vegetables.

Add onions to the meat component.

We twist the tomatoes through a meat grinder or grind them in a blender, place them in a heat-resistant bowl along with the carrots as soon as the onions become translucent.

Simmer the ingredients until soft and supplement the main composition with strips of bell pepper pulp and chopped eggplant. Season the food with cumin, pepper and salt.

Kaurma lagman with beef is a main dish that will relieve you of hunger for a long time. The main components in this dish are beef, noodles, as well as an assortment of juicy and nutritious vegetables: green beans, tomatoes, bell peppers and much more.

- Noodles for lagman – 250 gr.
- Tomatoes – 200 gr.

- Ground red hot pepper – ½ tsp.
- Ground coriander – ½ tsp.

Cooking process:
Step 1. Rinse the meat with water and dry it in any convenient way, cut it into large segments.
Step 2. Heat the vegetable oil in a saucepan and add the beef, as well as finely chopped onion - fry until golden brown, and then, reducing the flame to low, cover with a lid and simmer for 40-50 minutes. Afterwards, evaporate the excess juice and add salt, garlic, passed through a press, and spices.
Step 3. As soon as the beef has softened, throw large pieces of peeled carrots into a heat-resistant bowl and fry for 3-5 minutes.
Step 4. We supplement the dish with slices of tomato and bell pepper, beans - mix and continue cooking.
Step 5. After 3-4 minutes, add boiled noodles to the pan.
Step 6. At the same time, crack the eggs with a pinch of salt and one and a half tablespoons of water, fry two pancakes in a frying pan greased with oil.
Step 7. Roll the pancakes into rolls and cut into strips, pour into the lagman.

- Homemade pulled noodles – 500 gr.
- Onion – 1 pc.
- Garlic – 2 teeth.

- Tomato paste – 1 tbsp.
- Soy sauce - to taste.
- Sunflower oil – 4-5 tbsp.
- Zira – ½ tsp.
- Coriander – ¼ tsp.
- Paprika – ¼ tsp.
- Salt - to taste.
- Ground black pepper - to taste.
Cooking process:
Step 1. Remove the film from the fillet, cut into medium-sized cubes and fry in hot oil with salt and seasonings for about 7 minutes.
Step 2. After, add finely chopped garlic and onion, stir and fry for 5 minutes. Then add carrot sticks, pour in soy sauce and simmer for another 7 minutes.
Step 3. Transfer the aromatic fried ingredients into a bowl, and add a little oil to the hot frying pan.
Step 4. Pour tomato paste diluted with water into a heat-resistant bowl, as well as tomato chopped in a blender bowl - heat, stirring. After about 5 minutes, add chopped sweet pepper pulp to the sauce, take a sample and, if the sauce is sour, you can add a pinch of granulated sugar.
Step 5. Pour boiling water over the noodles and drain the broth, add the ingredient to the sauce, mix and heat.
Step 6. Next, put the chicken and vegetables in the cauldron, stir again and leave on the burner for another 5 minutes.

Cooking process:
Step 1. First of all, defrost the meat, prepare the vegetables and herbs.
Step 2. We wash the pork pulp and pat it dry with paper napkins, cut into arbitrary slices. Excess fat can be removed.
Step 3. Remove the skin from the onion head and cut into thin feathers.
Step 4. Heat vegetable oil in a frying pan with high sides and fry the meat over moderate heat for 6-7 minutes.
Step 5. At this time, cut the peeled carrots and sweet pepper pulp into bars.
Step 6. Add onion to the pork that has changed color, mix and simmer over low heat for about 3-4 minutes.
Step 7. Next, add carrot and bell pepper strips to the roasting pan, stir and fry for 3-4 minutes.

Fried lagman in a cauldron is a very popular dish in Asia that can easily be prepared at home, using only those products that you have on hand. The only thing you have to purchase is special elongated noodles, for the preparation of which you only need boiling water.

Ingredients:
- Beef – 350 gr.
- Noodles for lagman – 500 gr.
- Onion – 1 pc.
- Green beans – 100 gr.
- Peking cabbage – 100 gr.
- Bell pepper – 2 pcs.
- Radish – ½ pc.
- Tomato (large) – 1 pc.
- Sunflower oil – 70 ml.
- Tomato paste – 1.5 tbsp.
- Coriander – ½ tsp.
- Salt - to taste.
- Ground black pepper – ½ tsp.
- Soy sauce – 3 tbsp.
- Garlic – 3-4 teeth.
- Green onion – 2-3 feathers.
- Hot pepper - to taste.
Cooking process:
Step 1. We wash the beef and dry it with paper napkins, cut it into thin slices and marinate in soy sauce, ground pepper and a tablespoon of sunflower oil - stir and leave for about 30 minutes.
Step 2. Without wasting time, cut all the vegetables listed in the list, since there will be no time for this further. Chop beans, onions, garlic and hot peppers randomly.
Step 3. Cut the cabbage and sweet pepper pulp into medium-sized squares, tomatoes into cubes, onions into half or quarter rings.
Step 4. Place the meat in a cauldron with hot oil, fry over high heat with constant stirring until a characteristic crust forms.
Step 5.Add the onion to the browned beef, stir and simmer for a couple of minutes.
Step 6. Now add the tomato paste and tomato, salt to the frying pan, and add soy sauce if desired. Without reducing the heat, fry quickly, remembering to stir.
Step 7. Now add cabbage and green beans, mix and cook for 1-2 minutes.
Step 8. Add radish strips.
Step 9. Season the meat and vegetables with black pepper and ground coriander. We cook everything in the same way on a high flame, avoiding the formation of juice and extinguishing.
Step 10. After three minutes, place the bell pepper in the cauldron and stir frequently.
Step 11. After a few more minutes, add garlic, green onions, hot pepper and salt into the lagman.
Step 12. Immerse special noodles in boiling water for a minute and place on a sieve, getting rid of excess moisture.
Step 13. Transfer the noodles to the cauldron, mix thoroughly and after 60 seconds, remove from the burner.

Uyghur fried lagman differs from the original dish in that it is a second course without broth. Accordingly, the taste and aroma of all components turns out to be several times brighter, which cannot but please lovers of this mouth-watering dish.

- Noodles for lagman – 100 gr.
- Beef – 150 gr.
- Tomato paste – 1 tbsp.
- Bell pepper – ½ pc.
- Peking cabbage – 100 gr.
- Onion – 1 pc.
- Garlic - to taste.
- Ground ginger - to taste.
- Salt - to taste.
- Starch – 1 tbsp.
- Mineral water – ½ tbsp.
- Soy sauce - to taste.
- Ground sweet paprika - to taste.
- Vinegar 9% - to taste.
Cooking process:
Step 1.To marinate meat in a container, mix the following ingredients: eggs, a spoonful of starch, salt, ground pepper and a little soy sauce mixed with mineral water. Cut the washed meat into slices and immerse in the prepared sauce, leave for 90 minutes. Pour boiling water over chopped ginger and garlic in different bowls.
Step 2. After the time has passed, quickly fry the beef in hot oil until the color changes, add chopped sweet peppers and cabbage. We keep the ingredients on the fire for about two minutes with frequent stirring and throw them into a colander to get rid of excess fat.
Step 3. In an empty cauldron, add onion half rings, chopped garlic, along with the liquid, as well as the ginger water and grated tomato paste. We simmer the ingredients and then return the pre-fried beef and vegetables to the heatproof dish. Season with salt, paprika, soy sauce and vinegar, and heat for another 3-4 minutes.
Step 4. Transfer the contents of the frying pan to a plate (always along with the sauce). And put boiled noodles in a hot frying pan, fry for 2-3 minutes and add a quarter of onion rings.
Step 5. Place the noodles in a colander, removing the oil, and return to the cauldron, also add the meat sauce (without liquid).
